Southern Baked Yellow Squash

I used panko crumbs and zucchini (I ran out of squash in my garden and had a lot of zucchini). I also boiled the squash/zucchini with some crushed garlic for flavor and mixed the top panko crumbs with some Parmesan. The result was a very light and yummy dish. Very nice for a summer dinner.

My Crab Cakes

I've made this recipe twice and the crab cakes came out perfect both times. I made one small addition of coating the patties with egg first then in the panko crumbs (Panko is better than breadcrumbs).

Triple Dipped Fried Chicken

Honey Mustard BBQ Pork Chops

Very good marinade; a definite keeper. I didn't measure exactly and I only let it sit for about 2 hours, but it was juicy and the scent of the chops on the Q was heavenly!

Asian Orange Chicken

Very good recipe but it would be better in a fryer. I wound up frying just a little bit and then baking for 30 minutes at 375. This is because I worried about all the chicken not cooking thoroughly in the pan. I periodically put sauce on the baking chicken and it turned out pretty good.

Hamburger Buns

Much better bread recipe than other ones on this site. The rolls were big enough for 'sliders' so I'll make them bigger the next time. I let the dough rise for 20 mins then I kneaded and let rise for a few more mins before cutting into rolls. Easy and good.

Carrot Cake III

I had my 72 year old mother tell me that this was the best carrot cake she's ever had. That's pretty amazing. Great recipe....I used 1 cup white sugar and 1 cup brown. Very yummy.

Tim Perry's Soup (Creamy Curry Cauliflower and Broccoli Soup)

Great tasting soup. I don't have a food processor so the chunks of broccoli and cauliflower were a bit big so I wound up making a puree once they were soft. I also wanted to put in more broth but accidentally put in a can of cream of chicken, which actually gave it a creamier consistency so I didn't put flour in the milk. Before I pureed it, my husband was suspicious but he really liked it. I also softened the onions in a little bit of butter and added some garlic. A great recipe for getting rid of frozen veggies.

World's Best Potato Salad

I halved the sugar and it still came out too sweet. Instead of potato pieces I mashed it all together and added paprika and salt to taste. Very good recipe (if you limit the sugar).

Beer Batter Fish Made Great

As another reviewer stated, 'Epic Fail'. I don't know if using half frozen fish ruined it but all the batter slid off the fish to the bottom of the oil and caked there. The fish became small little grease patties as a result. Next time I'll try fresh fish.

Washabinaros Chili

I don't like chili but my husband does. He really enjoyed this recipe but for those chili neophytes beware....PLEASE use gloves when cutting the peppers!! Yes, I know...I'm an idiot. I had a nice milk + baking soda mixture on my hands for a few hours. Great recipe though....I used 2 habaneros and 2 jalapenos for a lack of the other peppers at my store. I used 1/2 cup coffee and 1/2 cup Kahlua. Seemed to work.
