Kerry's Beany Salad

This was fairly good. Folks seemed to like it, though personally I was surprised that it didn't have more flavor despite the array of spices in the dressing. I did, however, enjoy it just the same. I used hulled barley instead of pearl barley since it's what the local co-op had. (It's more nutritious too!) They were also out of green onions so I used red onion.

Bodacious Broccoli Salad

This was delicious and well received at my family 4th of July party. I used 3 broccoli crowns instead of two heads. Also, I used 1 cup cheddar cheese and 1/2 cup garlic cheddar. Like many others, I used roughly 1/2 of the pepper called for (I ground it right into the bowl so I can only estimate how much it was.)

Gluten-Free Yellow Cake

This cake is soo gooooood. It actually tastes like a "real" yellow caek. I found it and couldn't wait to try making it for my friend who's allergic/sensative/intolerant to what seems like everything in the world. He can have milk and is allergic to soy-based foods so I used Vanilla Rice Dream. The rice milk adds a bit of sweetness and vanilla flavor presumably making the cake a little richer. Also used Safflower Mayonnaise as traditional mayo in the US is soy based. I made it in a 13 x 9 inch pan baking it for 33 minutes.

Best Potatoes You'll Ever Taste

These were so not the best potatoes I've ever tasted. I'll definately go back to olive oil and luck of the draw seasonings.

Cream of Asparagus Soup I

This was a hit at our family Christmas dinner. We tripled the recipe so it took forever to do but worth the trouble. My friend's cousin who doesn't like asparagus loved the soup.

Monterey Jack Salsa

This was a great example of recipes simply being a guideline. We left out the salad dressing, avacados, and msg, added additional tomatoes and cut back on the cheese. Made quite the delicious appetizer.

Beef Tenderloin With Roasted Shallots

The darned grocery store was out of shallots and we were shopping at 8:00pm on New Years eve for New year's dinner. The meat counter was closed so we were only able to get a piece of meat 1/2 the size needed. Even so, this was AMAZING. I'll definately make it again - this time with the right ingredients!

Absolutely Ultimate Potato Soup

Didn't have any tarragon but tasted great with Italian Seasoning and lots of fresh Cilantro. My vegetarian friend had a taste ... even she couldn't resist the smell!
