Kerry's Beany Salad
This was fairly good. Folks seemed to like it, though personally I was surprised that it didn't have more flavor despite the array of spices in the dressing. I did, however, enjoy it just the same. I used hulled barley instead of pearl barley since it's what the local co-op had. (It's more nutritious too!) They were also out of green onions so I used red onion.

Bodacious Broccoli Salad
This was delicious and well received at my family 4th of July party. I used 3 broccoli crowns instead of two heads. Also, I used 1 cup cheddar cheese and 1/2 cup garlic cheddar. Like many others, I used roughly 1/2 of the pepper called for (I ground it right into the bowl so I can only estimate how much it was.)

Gluten-Free Yellow Cake
This cake is soo gooooood. It actually tastes like a "real" yellow caek. I found it and couldn't wait to try making it for my friend who's allergic/sensative/intolerant to what seems like everything in the world. He can have milk and is allergic to soy-based foods so I used Vanilla Rice Dream. The rice milk adds a bit of sweetness and vanilla flavor presumably making the cake a little richer. Also used Safflower Mayonnaise as traditional mayo in the US is soy based. I made it in a 13 x 9 inch pan baking it for 33 minutes.
