Have made this twice now. The first time I followed the recipe exactly and although it was really very good, I didn't like the texture; something about the crunchiness of the sugar in the ice cream just didn't seem right to me. I made it again a second time and substituted about a tablespoon of honey for the sugar, and the texture was much nicer IMO. The honey taste did come through somewhat, but it wasn't unpleasant. I think I will keep trying different variations, all in the name of science, of course. Thanks for the recipe!
