Turkey Tetrazzini II

This is good as a base recipe, but I wanted more healthful veggies added to my dish and followed others reviews and used chopped onion, garlic, carrots and celery sauteed in the pan first in a little evoo and butter. Then to the sauce I added lots of herbs as I love the flavors coming out of rosemary, thyme and savory. Pepper adds zip as well. Added a cup of peas just before going into the oven. Topped with parmesan and mozzarella. With the modifications, its a keeper for our family.

Black Bean Brownies

OMG this is so good! My new go to brownie recipe. I did follow the reviews and added more cocoa powder (half cup) and more sugar by adding extra quarter cup. Used coconut oil as well. They are devine. Thanks for a wonderful moist recipe.

Irish Boiled Dinner (Corned Beef)

Like other reviews I put the finished brisket under the broiler a few moments after covering with some mustard and brown sugar to let it caramelize. Yum!

Jalapeno Brie Cups

These were a hit at the last baby shower we did. We used Belletoile triple cream cheese (my favorite) and used raspberry jam on some and apricot jam on the rest. They were great.

Eileen's Spicy Gingerbread Men

After reading the reviews I added a little more cinnamon, ginger and cut the cloves in half. I also used butter. They came out very good and rolled out nicely after chilling. Also used white whole wheat to add more nutrition. I would make this again.

Healing Cabbage Soup

I like this soup but did add some embellishments like cayenne, tumeric, (anti-inflammatories) to the soup along with some kale from my garden and sliced olives at the end to garnish. I don't worry about cutting olive oil as its good for you.

Asian Lettuce Wraps

I made these for the first time and while they taste pretty good, I think they could use some more seasoning. I doubled the vinegar, pepper sauce, hoisen sauce, and sesame oil and it helped. I also added some garlic and onion powder. In the future, per others reviews I will try the peanuts, cilantro, mushrooms and some extra lime slices to squeeze on top of the wraps.

Kale Salad

I liked this salad quite well and am looking for recipes to use my newly grown curly leafed kale. Only a couple of changes. I used all extra virgin olive oil and agave nectar instead of sugar. I think some herbs like dill or basil might make it nicer.

Sausage Potato Soup

Great soup. I added more fresh herbs from my garden like chives, basil, oregano, sage, winter savory and a touch of dill. This made a nice savory yet light broth. Extra red pepper made this a super nice dish. Updated: A can of navy beans adds even more nutrition to this dish.

Potato Pancakes

I had about a pound of some flavorful leftover garlic mashed potatoes to use so I mixed it with 2 eggs and 1.5 cups of pancake mix and pepper. It was pretty sticky but molded into pancakes well enough with oiled hands. Drizzled olive oil into pans to cook until nicely browned and served with shredded cheddar and salsa. These were pretty good.

Slow Cooker Sweet and Tangy Chicken

I also made this with less BBQ sauce and it made plenty. I was afraid the Sweet BBQ sauce would be too sweet so I used HEBs new Texas Specialty series which has pretty good heat in it. One 14 oz bottle with 8 boneless, skinless thighs to reduce calories and fat worked well. Based on reviews, I added some ginger and served this over Jasmine rice. Its a keeper!
