Best Chocolate Chip Cookies

Love this recipe. It is similar to the Toll House recipe, but MUCH easier to cut in half (as far as having "even" measure amounts). Don't believe me? Check it out for yourself. :) And that's good because my daughter can make us a quick batch of cookies for dessert.

A Little Lighter Easy Morning Glory Muffins

This is my customized version an existing recipe on this site. I needed one more tablespoon of oil than I originally put in this recipe (2 Tbsp total). Also noted that the paper liners really stuck, but after a night in the refrigerator they peeled off just fine. I popped each in the microwave for a few seconds the next day before eating. They should freeze well. Also they were plenty sweet... maybe from the pumpkin? Next time I might cut the sugar down to see how it tastes. Actually yields 18 regular-size muffins.

Quinoa Pilaf

Very tasty. I used a teaspoon of low-sodium bouillon and had to substitute a 1/4 tsp of thyme for the bay leaf. I also left off the celery (didn't have any). Next time I might cut the olive oil down to 2 tsp. Will make often.

Chicken Noodle Casserole

Everything came together so nicely in this dish. I followed most of the original recipe except I used a package of ground turkey, thyme instead of savory, and I took a handful of shredded cheddar, mixed it with a handful of crushed buttery crackers and sprinkled it on top before baking. This is a good recipe for your food processor (to shred the cheese, chop the onion and slice the carrots and celery).

Super Easy Doughnuts

Very easy. Tasted good over here. I cut the recipe in half and used butter instead of shortening. I cut the dough into 8 pieces and rolled them into circles before frying them in oil on the stove. Then powdered sugar after they cooled.

Peanut Butter and Banana Smoothie

I like using a frozen banana, half the peanut butter and honey called for, low-fat milk (we never have soy milk on hand) and - this is key for me - adding a scoop of flax to kick up the nutrition. So easy to make with a hand blender and large cup. Very filling.

Sugar-Topped Applesauce Muffins

Fast and good with limited ingredients. Just what I needed today. I substituted egg nog for the milk and it was tasty. *I only managed to fill 9/12 of my silicone muffin cups - our family could have used a couple more.

Simple Waldorf Salad

I followed TYRIX16 suggestions. In a nutshell: I doubled the celery and apple in this recipe and left out the walnuts (had none on hand). I mixed the sugar and vinegar, then as I chopped the 2 apples I tossed them in the mixture to keep them from browning. Then added the celery and plumped raisins. Then the mayonnaise sparingly to cover the ingredients. No need for salt or pepper for me.

Cheeseburger Macaroni

I like this one and have made it a few times with the following changes. My three recommendations are to double the meat to 1 lb.; cut the cheese down to 6 oz. (that's equal to 8 slices of American cheese singles - add more if you like); and add a tablespoon of dehydrated onion. The onion is just like you find on fast-food hamburgers and makes it taste just like a cheeseburger!

Seattle Dutch Babies

A great alternative to pancakes and eggs, because this tastes like a combination of the two. Easy for small children to handle. Much less messy than pouring pancakes and easier to cook. Great texture. I used a 9 inch cake pan, which worked well. Tasted great with butter and syrup. Perfect for a family of four, especially if served with fruit and a breakfast meat. Will definitely become a breakfast staple.

Banana Oat Muffins

This recipe is great!!! I make it often for me and my children. Sometimes I substitute whole wheat flour for part of the white flour and I think its a little better that way. Next time I might try applesauce in place of the oil.

Garlic Chicken

One of the best baked chicken recipes!!! I like this recipe better with the following changes: substitute 1/2 the oil with butter. Add a heaping tablespoon of dijon mustard to the butter/garlic mixture before dipping in the bread crumbs/cheese. Bake on a rack in a pan to keep it crispier.

The Absolute Best Cookie Recipe Ever

Good cookie, I will make them again. We heavily floured the work surface, hands and rolling pin because the dough was a little difficult to work with (sticky) at first. But my son and I got the hang of it and I don't think the extra flour took anything away from the flavor or texture and I like it!

Kids Favorite Meatloaf

Really, really good. I formed it into a loaf shape a baked it on a rack to cut down the fat a little. I will probably cut the amount of salt in half next time... the meatloaf wasn't really salty, I'm just kind of "salt-sensitive" :)
