Brown Sugar Meatloaf

Thank heavens for this recipe!!! I had almost despaired of ever cooking a decent meatloaf in my life. My mom's was so good, but I never got her recipe. Then I tried the onion soup version and it was tasty but made my stomach "bubbly" :) So, when my husband said he was craving meatloaf, I came out to my favorite recipe site and found one of my new favorite recipes. I love this just the way it is. Use all that extra sauce in the bottom of the pan to pour over your mashed potatoes! What a great combination of sweet and tangy!!

Sweet Potato Pie I

This was the best sweet potato pie I've ever tasted. I actually took on a sweet potato pie because I had canned sweet potatoes last season and needed to use them. Because they were already in sweet syrup, even though I drained them, I didn't add the sugar and I reduced the milk a little, but I imagine it would have been fairly similar to have started with freshly boiled potatoes. I'll look forward to sharing this with other people, and am officially planning to volunteer for dessert duty this year for the holidays :)

Chickpea and Quinoa Salad with Lemon and Tahini

I love all the ingredients in this, so tried making it. I used canned garbonzo beans. I soaked the quinoa overnight, and was confused by the direction to "cook it in its own water" because there was none. So, I added water and cooked it, which I think was a mistake, as it came out mushy, like starchy rice. I feel like I should have either used it after the soaking, or skipped the soaking and gone right to the cooking. I'll definitely try it again, because it still tastes good, but with modification in method.
