Chicken Pot Pie IX

This recipe was very good and very flexible! I was worried that it wouldn't have enough flavor as there isn't much seasoning but it was much better than I expected. I used leftover rotisserie chicken and frozen mixed vegetables and some frozen hashbrown potatoes instead of the celery, carrots and peas called for in the recipe as I had all these ingredients on hand. I didn't cook them as called for in the recipe since they were already cooked, but I microwaved the frozen veggies first and then blotted them dry so they wouldn't create any excess liquid. I also used store-bought pie crusts as I was short on time. I will probably add some thyme to the recipe next time just to try a little more flavor.

Fiesta Pinwheels

I followed the recipe exactly and also tried a few variations. I headed the advice of many of the reviewers and used a little less of the taco seasoning. I tried it without the seasoning and with. I liked both but my taste-testers like it with. I also made it with picante and without. I preferred the pinwheels with picante sauce but without the seasoning, but my taste testers liked it with picante and seasoning. My biggest suggestion is to next time omit the sour cream if adding the picante because the pinwheels were a bit soft and didn't hold their shape as nicely. I also drained the chiles to prevent making the filling too runny. My taste testers agreed with many of the other reviewers to switch the green chiles for jalapenos. Tasty recipe in any of the variations!

Party Pinwheels

I really liked this recipe! The filling firms up nicely in the refrigerator which allows for perfect slicing once removed and they held their shape nicely. I followed several suggestions of reviewers and tried these with the ranch dressing mix but also with Italian dressing mix. I preferred the ranch, however my taste testers preferred the Italian. I used red, orange and yellow peppers, finely diced and added a little mayo to make the filling more spreadable. I also microwaved the tortillas for 10 seconds before spreading the filling, as suggested, to help roll them tighter, easier and it worked beautifully. I tried the filling on red pepper basil tortillas, spinach vegetable tortillas, and plain flour tortillas. The flavored tortillas were delicious!!

Jet Swirl Pizza Appetizers

These were great! I followed the recipe exactly the first time using the french bread dough that was suggested by another reviewer-delicious! After the first roll, I decided to double the mozzarella cheese and tried the pizza crust dough-also delicious! We preferred the taste of the pizza dough a bit more but the presentation was better with the french bread dough as they held their shape better. I also microwaved the pepperoni for 30 seconds and blotted on paper towels before rolling as suggested and it worked great to prevent too much grease.

Cocktail Meatballs

These were just okay. I followed the recipe exactly using store bought meatballs (not Italian). They weren't that flavorful and nothing to write home about. These were not really sweet and didn't have any kick or spice either.

Quinoa Veggie Salad with Zesty Vinaigrette

This was very good! Beware-it makes a TON! I used a bit more water to cook the quinoa in as the normal water to quinoa ratio is 2:1, so I went a bit in between with about 5 1/2 cups water to 4 cups quinoa. I added a bit of chicken bouillon and salt to the water before adding the quinoa for extra flavor. I also doubled the vinaigrette as it was too dry. Many of my guests had never heard of quinoa and loved this recipe! Very easy and tasty!
