Vegan Chocolate Cake

Great, easy recipe that yields a moist, delicious cake every time. I choose this recipe sometimes even when I'm not cooking for vegans, and then I sprinkle the top with butterscotch chips before putting it in the oven. Not a thick layer of chips, by the way, just a nice, even sprinkle.

Pure Maple Candy

By far the easiest and most accurate description of how to make maple sugar candy. This is the soft candy style, not the rockhard style. Follow the directions to the letter and you'll get this right. If the syrup starts to bubble over the pot, add a drop or two of vegetable oil. I made this without nuts.

Apple Avocado Salad with Tangerine Dressing

Delicious salad. Served it for friends and it was well received. The dressing was a bit bland as per the recipe, so I made the following additions: 1/2 teaspoon grated fresh ginger, 1/2 teaspoon sesame oil (a little goes a long way), 1 teaspoon honey, 1 tablespoon white wine vinegar. This gave the dressing a complexity that matched well with the apples and avocados. Will make again!

Black Bean and Corn Salad II

This was a hit at a recent dinner party! We were serving light summer fare and this fit the bill! Tangy and delicious--goes great with veggie burgers! I found the lime slightly overpowering, so the second time I made it I added a half teaspoon of honey to the dressing. This definitely toned down the sour and made the dressing much more balanced. We also don't like peppers in our house, so we added a second avocado as a substitute. Yummy!

Hillary Clinton's Chocolate Chip Cookies

Leave it to this politically savvy powerhouse to figure out how to make a fantastic chocolate chip cookie! :) I'm being completely bi-partisan when I say these were fantastic. Crispy, flavorful and delicious!!! I followed directions to the letter except for greasing the cookie sheet before baking (thought it wasn't necessary). I would reccommend NOT skipping this step, however, because cookies stuck firmly to pan!

Fast and Easy Pancakes

If you're looking for a quick way to make pancakes on a busy morning--this is it. But beware--flavor needs a little tweaking. As others have noted, it's a little sweet. So, I decreased sugar by 1/4 c. In addition, I'm used to pancakes which have a dash or two of salt to set off the flavor of the maple syrup. They were just a little too bland for us. We've tried this recipe with blueberries (adding about 1/2 c of frozen ones to the blender and blending for 10 seconds to incorporate (but not pulverize) the berries).

Although the brownie recipe was good, the frosting was too thick (needs some more butter, or cream (as another reviewer suggested). Bottom line: Brownies, excellent; frosting, mediocre.

Easy Granola Bars

I had high hopes for this recipe -- I really love granola bars. Unfortunately, I was disappointed. The flavor was good (although I probably would reduce the amount of chocolate chips), but texture was not. The bottoms of the bars were slightly mushy. (I think moisture formed at the bottom of the pan as they cooled. I'm not sure how to fix this problem, since the recipe said not to take bars out of pan until fully cooled.) Would not make again. :(

Apple Bran Muffins

Moist and delicious muffins! Made the following alterations to the recipe: 1. Did not use the dry milk. (Didn't have it on hand.) 2. Used raisin bran instead of plain bran. (I like the combination of raisins and apples.) 3. Added one tablespoon of flax seed for body and nutrition. My family loved these.

Chocolate Chip Banana Muffins

Foolproof muffins that are delicious. I forgot to add the oil -- had to add it at the end (usually a disastrous idea) -- but the muffins still came out moist and yummy. I made no alterations to this recipe.

Chocolate Cheesecake I

Sinfully rich and delicious. Chocoholics beware of this one! Made the recipe exactly as described, no alterations. To make sure that the cheesecake doesn't crack during cooking, make sure oven isn't hotter than recipe calls for. If your oven tends to run hot, then turn it down 5 to 10 degrees. Turn oven off exactly as recipe describes. Also consider adding an ice cube to the bottom of the oven (I carefully toss one in before I put in the cheesecake) to add humidity.

Mexican Pasta

I must admit I was a bit skeptical about this recipe, but it was excellent. Don't be scared off by the strange combination of ingredients -- this is a hearty vegetarian meal with great flavor and texture! I modified this recipe by only using one half of one onion (just seemed like too much otherwise). In addition, I used about half of a can of diced tomatoes, since I wanted the sauce to be thicker. I used a little cheese, and, since my family doesn't like peppers, I omitted them, and used diced avocado as a garnish for color and flavor. Definitely will make again!

Cherry Cheezecake

This recipe would surprise even the most die-hard non-vegans. Yummy and light. Recipe calls for too much lemon juice. I used the juice of one lemon and even that was too much. Next time I will use the juice of one half of a lemon. I found it very difficult to get the crust into the pie pan. It was too sticky -- stuck to my hands rather than the pie tin. Eventually, I tried greasing my hands with a little vegetable oil and that helped. Next time I may use margarine instead of maple syrup. Otherwise it was a great dessert, and I will definitely make it again!

Vegan Lasagna II

Very yummy vegan recipe. Even my daughter ate it (and she's not a fan of spinach). I modified the recipe by making sure to drain the spinach very well before adding it to the tofu, and by adding a heaping teaspoon of corn starch to the tofu mixture before putting it in the microwave. Otherwise, worked out very well.

Easy Mexican Rice

Good recipe. Tasty and easy to prepare. Lettuce makes a nice compliment and adds texture. I made the following modifications to the recipe: 1. Used black beans instead of kidney (just a personal preference). 2. Put taco seasoning, tomato sauce and diced tomatos in the pot with rice in the *beginning* of the cooking process instead of the end (so rice would absorb flavor). 3. Because I added sauce and diced tomatos in at the beginning, I decreased water by 1 cup (used 2 cups instead of 3). I still had to cook the rice with the lid off to cook off liquids, so in the future, I will probably try decreasing water even more. 4. Added a bit of cheese on top and a couple of tortilla chips on the side. Will make this recipe again.

Grilled Salmon with Ginger-Orange Glaze

Superior recipe that's tasty, fast and impressive. I didn't have horseradish mustard on hand and substituted fancy mustard. Still tasted great! I also used freshly squeezed orange juice, and think this added to the flavor. Highly recommended!
