Dandelion Greens with a Kick

Next time I would boil them longer, maybe 8-10 minutes to get them less bitter. A little more garlic and add salt while sauteing.

Coconut Macaroons III

Very good. A little sweet, I'd use 1/2 or all un-sweetened coconut. Cook about twice as long. They only keep for about 2-3 days.

Turkey and Quinoa Meatloaf

Great, but cook time is WAY too long. I cook it for 30-35 min. I also add just two or three slices of bacon laid across the top so that the juices are absorbed by the loaf, keeping in moist.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Great winter soup; cheap and easy, nice to have on hand all week. I added a jalepeno, much more spices and a few more, and pureed it.

Eggplant Parmesan I

Very good--4.5. I let the eggplant sweat for about an hour, breaded it and cooked it in a pan for a few minutes each side, using cooking spray and very little oil. I also mixed some prepared garlic (about 2 cloves) in the cheese mixture. Next time I will use more eggplant and maybe cut it a little thinner.

Best Butternut Squash Soup Ever

This really is the best butternut squash soup EVER. I never have thyme on hand, so I switched it out for a jalapeno, which I sauteed with the onions and garlic. I also doubled everything except the stock, which produced a great, thick consistency.
