Portobello Stuffed Mushroom Burger

Excellent!! I thought i might not like the combination of the cottage cheese and cheddar but, I did. The only thing I did different was grill them instead of baking but, they turned out great. Even the 3 1/2 year old gave me the thumbs up!

Amazing Crunchy Tofu Salad

I can't believe I'm saying this but, this was delicious, I couldn't stop eating this tofu. I have tried many recipes for tofu and just never cared for it, but all the flavors come together just perfectly and the crunchiness of the tofu finish the salad off just right.

Cranberry Pistachio Biscotti

These were the best biscotti I myself ever made. I only used about 3/4 cup of pistachios but next time I would up that to the full amt or at least 1 cup. (I coursely chopped the pistachios and had no trouble slicing the loaves). I used 1/2 cup cranberries as in the recipe but,I would increase that slightly also by about 1/4 cup. Otherwise the taste and texture were excellent. Also I dipped the tops in chocolate and as we all know, chocolate only makes good things even better.

Holiday Brie en Croute

Oh my this is excellent. Since I tried this recipe a few years ago, I have to refrain from making it TOO often. It is absolutly delicious. I like to serve (along with crackers) fruit such as slice apples with it.

Lobster Rolls

I am only giving 4 stars because I made a couple of changes. Used lemon juice instead of lime, red onion in place of green onions and put it on a deli flat which I did grill with butter. This was based on what I had on hand. As it turned out, it was delicious. I used slipper lobster tails which I broiled then let cool. Mixed with the mayo mixture and refrigerated for a couple of hours. It made a great valentine dinner, easy but great tasting and made most of it ahead of time during the day.

No Peek Irish Beef Stew

Really good, came out tasty and meat very tender. The only reason I gave 4 stars instead of 5 is because I would leave the sugar out. It made the dish just too sweet. It needs no sugar at all. I had to add more salt that I would have liked to combat the sweetness.

Rhubarb Stir Cake

This cake was very good. I only had about 2-2 1/2 cups of rubarb on hand so I added about a cup of chopped strawberries. I was afraid it wouldn't be moist enough. It turned out plenty moist but I think I still would like it better with the full amount of rubarb

Gingerbread Biscotti

These were pretty good. I think they needed a little more of a spicey taste, I might increase the ginger next time and add some salt. Otherwise very good. Do not use butter, a friend of mine who makes great Italian biscotti says you always use oil for a genuine biscotti. I drizzled they with a lemon glaze made from powdered sugar and fresh lemon juice and that really added a nice touch.

Healthy Banana Cookies

I have been making these without the oil for quite a while. The are super healthy and taste great. I have added cinnamon, nuts, or put a few chocolate chips on top of each before baking. You can really mix it up to your taste or what you have on hand.

Lemon Chicken Piccata

Recipes was very good, but I had the bitterness in the sauce too. Next time I will just use the lemon peel. I'm sure the white pith was what did it.

Jicama and Pineapple Salad in a Cilantro Vinaigrette

This recipe sounded like it was something right up my alley. I never met a veggie I didn't like and I do like jicama but the combo of these flavors...I don't know what it was, I just really didn't like it. Maybe my pineapple wasn't sweet enough or used too much cilantro...sorry.
