Crunchy Vegetable Salad

I was pleasantly surprised at the taste of this salad. I made it with a low fat mayo. The salt was a little much for me, but that's just personal taste. I would recommend starting with a little salt until you are satisfied with the results. I doubled the recipe...it's gone a short time later.

Fat-Free Bean Salad

I thought this was great for a fat free recipe. I did tweak it to reduce calories by substituting the sugar with no calorie sweetener. I used a relish that had Splenda in it. Also, I would recommend using apple cider vinegar (if that's your preference) instead of white vinegar. Another can of kidney beans would be fabulous, and you could easily change this to a more traditional three bean salad by using regular canned green beans and canned waxed beans. Garbanzo beans would be a great addition as well.

Johnsonville® One-Pan Italian

This was AMAZING, FAST, and DELICIOUS! This is a major, major keeper - great for families in a hurry to sit down and enjoy a nice dinner together. Add some garlic bread and salad, and you're good to go!

Breakfast Quiches to Go

I like more of a quiche lorraine style quiche, so I substituted swiss cheese for the mozzarella. Then, I put a dash of nutmeg in the mix. When I make these again, I may leave out the spinach and add some bacon.

I was skeptical about making these because I'm not a huge dark chocolate fan. However, not only did I like them, but my kids really enjoyed them as well. I took these to a party, and they didn't last very long.

I used turkey bacon and added salt and pepper to the eggs. I didn't scramble, just poured onto the griddle, let it cook, cut it and folded for each sandwich.

Easy Vegetarian Corn Chowder

I felt the nutmeg added a nice flavor to this soup! I used fat free half and half and organic crispy canned corn. I originally thought there might be too much butter and flour, but tried it as is and it turned out great. I have a couple of suggestions regarding this recipe. First, it may be personal preference, but I sauteed the onion and celery until they were soft. Then, I removed the pan from heat while adding flour and whisked it with the butter and vegetables without cooking it for six minutes to avoid any kind of scorching. It really didn't need to be cooked for six more minutes since it developed into a thick paste and was ready to have the broth added. Whisk the broth in slowly and allow the soup to thicken while doing so. Overall, I really loved it!

Easy Mexican Casserole

I substituted Johnsonville mild Italian sausage for the ground beef in this recipe. I cooked the sausage first. Then, I put it in a food processor to break it up into smaller pieces. The recipe is unbelievably good...as though you're at a party having an awesome Mexican-style Dip. The sausage was great, but I think I'll try Johnsonville's four cheese sausage in this recipe when I find it in the grocery store.

Creamy Pesto Gnocchi with Italian Sausage

I used a cheese Gnocchi, and my family absolutely love it! We didn't need to add any additional Parmesan. It was great without it (and I LOVE Parmesan, so leaving that off is an oddity for me). This was easy to make and looked and tasted like it came from a fine restaurant.

California Grilled Veggie Sandwich

This was great! I used a frozen focaccia bread that made this incredible! I will definitely make this again! We made it vegan for one of my daughters who left of the mayo blend and feta and added a vegan cheese. WONDERFUL!

Grilled Portobello Sandwich with Roasted Red Pepper and Mozzarella

I love mushrooms, so this was a real treat. I didn't have basil on hand, but used lettuce and tomato. I'd advise anyone making this to pat the mushrooms dry or risk having a wet bun. Overall, it was great for a mushroom lover...and I'd even eat it without the bread.

Greek-Seasoned T-Bone Steaks with Cucumber and Tomato Salad

I used a Mediterranean seasoning with this recipe. This recipe contained such a small amount of ingredients to use and packed with flavor. Don't cook your steaks until they're well done with this! Medium rare to medium is perfect. Some might prefer a bit more salt, but I really enjoyed the simplicity of this dish. Wait until you have it on the table and decide to salt later. I was pleasantly surprised. Also, it might be tempting to add some oil to the salad, but refrain! You won't miss it! I have an infrared grill and put hickory chips in prior to cooking the steaks. I put the steaks on when they started to smoke. This is a simple recipe to make with great end results (especially if you're experienced with the grill).
