Creamy Pesto Gnocchi with Italian Sausage

I used a cheese Gnocchi, and my family absolutely love it! We didn't need to add any additional Parmesan. It was great without it (and I LOVE Parmesan, so leaving that off is an oddity for me). This was easy to make and looked and tasted like it came from a fine restaurant.

Italian Pocket Sandwiches

If you like calzones, you'll love this! Extremely easy to make, and great for something quick! I put these in a toaster oven to cook it quickly, and everyone loved them.

Chiliville Chili

I tweaked this recipe and not for any other reason except I screwed up my grocery shopping. I used two small onions and chopped up one medium green bell pepper due to not having the tomatoes with onion and green bell pepper. I discovered my beef broth was gone, so I added a cup of water and two teaspoons of garlic salt after discovering I didn't have garlic either. I used two cans of Italian style plum shaped tomatoes in puree (1 lb. 12 oz. each) since I didn't have tomato paste and love the extra tomatoes. I followed the rest of the recipe the way it was written, and have been cooking enough to know that my changes wouldn't severely alter the taste. Loved the chili recipe, and it put a kick into my usual go to chili fare!

Easy Mexican Casserole

I substituted Johnsonville mild Italian sausage for the ground beef in this recipe. I cooked the sausage first. Then, I put it in a food processor to break it up into smaller pieces. The recipe is unbelievably good...as though you're at a party having an awesome Mexican-style Dip. The sausage was great, but I think I'll try Johnsonville's four cheese sausage in this recipe when I find it in the grocery store.

Easy Vegetarian Corn Chowder

I felt the nutmeg added a nice flavor to this soup! I used fat free half and half and organic crispy canned corn. I originally thought there might be too much butter and flour, but tried it as is and it turned out great. I have a couple of suggestions regarding this recipe. First, it may be personal preference, but I sauteed the onion and celery until they were soft. Then, I removed the pan from heat while adding flour and whisked it with the butter and vegetables without cooking it for six minutes to avoid any kind of scorching. It really didn't need to be cooked for six more minutes since it developed into a thick paste and was ready to have the broth added. Whisk the broth in slowly and allow the soup to thicken while doing so. Overall, I really loved it!

I used turkey bacon and added salt and pepper to the eggs. I didn't scramble, just poured onto the griddle, let it cook, cut it and folded for each sandwich.

Butterscotch Haystacks

I wanted to give these a try, but I thought they tasted terrible. They would've been better if the marshmallows were eliminated...and maybe the peanut butter too. Another option I think would taste better is to use a milk chocolate chip with the peanut butter. The butterscotch and peanut butter were not a good combination. I brought these to a party and only one person there liked them. I wouldn't make them again unless I did the alterations of eliminating the peanut butter and marshmallows or if I eliminated the marshmallows and used peanut butter with milk chocolate.

Jumbo Dark Chocolate Cookies

Swanson® Ultra Creamy Mashed Potatoes

I thought these mashed potatoes were okay, but the after taste of the broth was a little strange to me. It does add a different flavor, but I didn't feel it was GREAT. Also, I did have to explain to everyone that I used the broth to cook the potatoes since they ALL noticed the aftertaste. I would say these potatoes are a matter of preference.

Moist and Savory Stuffing

This recipe was very similar to a family recipe I use every year, so I decided to add the chicken broth rather than the family's traditional water. A few tips to get more taste from this: add poultry seasoning (at least 2 teaspoons or to taste - I use 1 TBSP with one bag of the herb stuffing)and add salt to taste. You may want more than a "generous dash" of pepper as well. This DOES need more added to it. I have never found Pepperidge Farm Herb Stuffing to have enough herbs in it to flavor stuffing. You will need to add more to it to get a good flavor. The difference between this stuffing and the family one is the amounts of onion and celery. The family stuffing also tends to not be dry and cooked in the bird (which is brined) for additional flavor.
