Chef John's Hot Spinach Artichoke Dip

I made this recipe as written and it was a bit too fatty for me. The second time, I replaced the Gruyere and Mozzarella by using 1 cup fat free Chobani plain yogurt. For the cream cheese, I used fat free too. I also excluded the butter. It made it much lighter as only the Parmesan had fat in it.

Creamy Kale Salad

This was realllly good! I only had pumpkin seeds, and used splenda instead of sugar and diced red pepper instead of raisins to make it lower calorie. It was awesome!! I will make again!

Slow Cooker Carnitas

Awesome! I will definitely make this again! My modifications were minor. Based on others I doubled the spices, but I also omitted the salt, added cilantro and some onion and used fresh garlic instead of powder (we love garlic). I also used a bone-in roast and just pulled out the bones. Delicious!

Took longer to cook than listed, but other than that, wonderful! I didnt have rhubarb so I replaced with tart apples and fresh cranberries, cutting back on the sugar. Perfect!

Scalloped Sweet Potatoes and Butternut Squash

I loved this dish! Idid make quite a few changes, but stayed to the idea of the dish. I didnt have asiago so I used mozzarella and fresh parmesan. I also used a whole onion. The sauce was not enough to coat the vegies so I added another cup of milk/1 tbsp flour. In addition, no sage so I used thyme, a little garlic salt and I like the cinnamon taste mixed with root vegies so I added a teaspoon. My husband was skeptical, but said it was good!

Texas Ranch Chicken

My fussy husband said "wow this is really good!". My alterations were to use two breasts. I sprayed dish with Pam and sprinkled sea salt, ground pepper and thyme on both sides of the meat. I didnt measure, but I basically covered the surface with a layer of ranch and topped with slices of mozzarella. VERY yummy! Will make again!

Southwest Stuffed Chicken

This was excellent! My husband is fussy and tore through it! I also opted out of the flour and used a few thin butter pats atop the coating. My twist was that I didnt have enough bread crumbs so I crushed taco shells up and mixed 50/50 with what I did have. It added a lovely corn taste and was awesome! Will make again!
