Spiced Yogurt Pound Cake
Followed several different suggestions - added the 1/4 tsp black pepper, 1 cup honey vanilla greek yogurt, 1/2 cup oil, 1/2 cup cinnamon applesauce, 3/4 tsp baking powder. Made in two loaf pans - cooked one with sliced spiced apples on bottom and powdered sugar on top. The other I used a simple light homemade cream cheese frosting with a 1/4 tsp allspice. Cooking time was exactly 35 min. Brought to work and they were gone within 15 minutes.

Apple Betty
Winner! Went with 1/2 brown & 1/2 white sugar as suggested. Also added 1/8 tsp ground cloves and threw in some cranberries. Used about 10 small red apples. Placed them in a bowl of orange juice while cutting and then drained (drank actually) the juice before baking since the apples were on the mushy side.

Chicken Tortilla Soup V
I've made this a couple of times for church dinners. Easy to adjust for more servings. Went with the lime as suggested. Used seasoned fajita chicken, sauteed with onion, garlic and peppers. Cooked a concentrated version in the crock pot all day and then mixed with hot chicken broth before the dinner. Served with corn chips, tortilla strips, shredded cheese, sour cream, and chopped avocado on the side. Always a hit.
