Classic Chili

Classic Chili Haiku: "Too tomato-ey. As basic as chili gets. (But not a bad thing.)" So it's a good chili - yes, classic in that it has what one would call the traditional seasonings and ingredients, but I found it to be too watery, w/ heavy tomato tones. My little one gobbled her's up, since it was devoid of spice, but I had to add Sriracha to mine, which, while giving it some heat, didn't mask the major tomato taste, nor make it thicker. I'm still on a neurotic mission to make all of the chili recipes that AR has to offer,

Honey-Soy Pork Chops from the Bradshaw Family

Honey-Soy Pork Chop Haiku: "This was just so-so. But I love a grilled pork chop! Glad that I tried it!" I deviated from my stand-by marinade that I use for chicken and chops (AR's spectacular "Pretty Chicken Marinade") b/c this was just so simple to toss together. It was a nice mild flavor, but really needs some kind of oomph. Springtime-sunny-evenings have me poised over the grill at any opportunity, so thank you Bradshaw Family for giving me the chance to try a different marinade!

Quick and Easy Apple Muffins

Apple Muffins' Haiku: "Great warm from oven. But not as good leftover. (Added brown sugar.)" I followed the recipe, only adding a couple packed TB's of brown sugar, and not peeling my apples. They were pretty awesome right out of the oven w/ a pat o' butter, but I wasn't as delighted w/ them the next morning. Still, a pretty good muffin, and my young daughter declared them "splendiferous."

Cuban Black Beans I

Cuban Black Beans' Haiku: "Oh gosh these were good. Husband says, 'best beans ever!' (I followed naples.)" I used naples' review as a go-to, since I only had a can of black beans (oh, and no red bells, just green.) Pretty much did as written, and something about that combo of seasoning and the balsamic vinegar just made these so unusual and delicious! Ate them hot, sniggled a cold leftover bite, had more leftovers warmed in a tortilla w/ cheese - everytime just as good as the last.

Laura's Quick Slower Cooker Turkey Chili Haiku: "This was fine and good. But closer to 3.5. Less red pepper flakes!" Eek, I don't know if my child would've liked this if it had sat in the crockpot chirping w/ a whole teaspoon of red pepper flakes, so I reduced it to 1/4 tsp., and also dropped a can of kidney beans, due to what I had available. 6 hrs in the crockpot on low later and it was charring at the corners, so I had to add some water. 2 hrs. later, it was glue-thick (which in all honesty, is how I like my chili) but the crockpot was a b1+c4 to scour after dinner. I liked this chili alright, and you would never guess that it was turkey and not ground beef, but I'm not entirely sure if I'd make it again.

Thai Shrimp & Cabbage Haiku: "Wicked, tasty dish. Made a couple small changes, but adored this meal!" I coarsely chopped my cabbage rather than shredding so it'd retain more bite and shape, and also stir-fried it in sesame oil. I used some red bell pepper for additional color. My shrimp were a frozen "garlic grilled" brand, so while that added extra flavor-oomph, I know next time I'd be happier w/ fresh shrimp. My only wee concern was that it was a little watery, so I think that next time I'll also mix a little cornstarch w/ water to thicken the sauce up at the end.

Kielbasa Cabbage Skillet Haiku: "Mmm, I love cabbage. Nice 'sub' here for a pasta. With good flavor, too." I used a little red bell pepper too for some extra color, as well as added 1 TB Cajun Seasoning & a shake of Worcestershire; very pleased w/ this dish. Reminded me of a low-carb southern stir-fry, easy to make and tasty w/ the addition of the cabbage.

Raspberry Oatmeal Bars Haiku: "Seriously good. Can't be any easier. (Great for a bake sale.)" I've been making these for years, and can't believe I'm just getting around to unloading my 5-stars on this so-excellent-so-easy recipe! The only things that I do different is swapping water for lemon juice, and adding a splash of milk and 1/4 tsp. vanilla to the cake/oats. I've experimented w/ different cake flavors/fillers (such as chocolate cake w/ nutella in the middle, or lemon cake w/ strawberry jelly), but I've found that as written, this recipe always wows people who taste it, and even more fun is their being unaware at just how crazy simple it is to do.

Zucchini Ranch Meatloaf

Zucchini Ranch Meatloaf Haiku: "Halved with all ground beef, but used everything the same. Super-moist and nice." So I made a 1-lb'er w/ all ground beef, and kept everything else as written. We couldn't taste either the ranch or the cheddar cheese, so really, what we liked best about this meatloaf was the addition of the grated zucchini, which made it moist, and hey, can't complain about the addition of anything green to what I eat. I also liked the ketchup/steak sauce on top; dragging a bite through sriracha sauce gave it a nice sweet/spicy taste, so all-in-all, it was meatloaf success.

Easy Pizza Sauce I Haiku: "Oh yes, it's easy! I only reduced water, but kept it the same." Left my sauce to sit for the afternoon b4 spreading on a stellar cauliflower-crust recipe that I found on eat-drink-smile for a truly awesome pizza dinner. Topped w/ spinach and some sauteed veggies, this fool-proof sauce made a great pizza!)

Cabbage Patch Stew Haiku: "Wow, this was awesome! This recipe surprised me. Easy and tasty!" Followed the recipe exactly as written, although my stewed tomatoes turned out to be a "Mexican-seasoned" type, which probably added an additional flavor bump. Ranch style beans are a must as well. i thought the cabbage would disappear to mush after being the crockpot that long, but it was great, and frankly, we thought it a yummy, healthy alternative to having pasta in a soup/stew. Looking forward to making this again!

Cottage Meatloaf Haiku: "Pleasant and basic. Not 'firm' enough for my tastes. But we still liked it." I don't know if it was the tomato juice, or if I should've increased the bread crumbs, but my meatloaf was too moist and fall-aparty. As far as tastes go, it was still great, but definintely couldn't have translated to leftover sandwiches as it was a bit soggy crumbled. I'd make it again, but probably lose the juice and up the breadcrumbs, otherwise, a nice homey comforting meatloaf recipe.

Gumbo Style Chicken Creole

Gumbo Style Chicken Creole Haiku: "Holy amazing! Spicy, can't-stop-eating-good. Followed some reviews." Adored this dish, and took helpful tips from many of the reviews, such as swapping mushrooms for celery, adding chick. broth (1 c.), adding 1/2 tsp. dried thyme, swapping hot sauce for 1/4 tsp. cayenne pepper, and I also threw in some turkey smoked sausage. Out-freaking-standing! Not sure why there's so much discord over preparing the roux; perhaps there are different methods, but I've found the med. heat (oil, not butter, and flour), constant stir, not for a measured amount of time, but til it bubbles and darkens (deeper than peanut butter, which might as well be a gravy-thickener and not a true roux) always works for me. This "gumbo" was the perfect heat, texture, and taste, and I look forward to making it again and again.

It's Chili by George Haiku: "Bare bones, fine chili. Lots of room to customize. Didn't blow my mind." Anyone else notice that this is nearly identical to "Flatlander Chili", w/ the exception of celery? I chose to make George's, b/c well, there are 2 exclamation marks in the title, and that just made me smile. No insult to George's recipe, but as so many reviewers state, this is a basic chili - a nice stepping-stone from using store-bought chili-seasoning pouches, w/ plenty of room for personalizing. I halved the recipe for 1 lb. beef and followed the overall-agreement of reviewers who swapped tomato juice for crushed tomatoes. In the crockpot for 8 hrs. and served w/ cheese on top and a hunk of cornbread, yummy good chili on a chilly night, but didn't wow me. I'm on a neurotic mission to make as many chili recipes as there are on AR, so I'm glad that I can tuck George's!! under my belt.

Carnitas Filling Haiku: "Smelled divine cooking. Easy prep, and tasted great. (I changed the method.)" Did mine in the crockpot all day til it shredded w/ ease, then baked the shredded pork for a little while to crisp it up. Dumped onto a tortilla w/ a squeeze of lime, cheese, onion, and tomato - wonderful! I'm anxious for leftovers, as I used a 3+ lb. pork butt, and I'm thinking of doing it in a burrito w/ some beans and and sour cream.

Starr's Savory Meatballs Haiku: "These were pretty good! Ate them with spaghetti squash. (I made mine smaller.)" I followed the recipe exactly as written, only making my meatballs smaller than indicated in the directions (bout ping-pong ball size.) Tried them right from the oven (tasty, but not mind-blowing - a good, basic meatball), then let them simmer in sauce for a little while b4 serving over a spaghetti squash. The whole family declared them wonderful, so we gotta give props to Starr for her easy meatball recipe.

Lighter Mexican Meatloaf Haiku: "Five stars for the taste. Fiesta, funky meatloaf! But, crumbled too much." I'm normally a meatloaf purist with just the basic ingredients, so this was a fun change. Had to halve the recipe, having only 1 lb. ground turkey, but stuck w/ everything else as directed in the recipe. (Mine was more like 350 deg. for a little over an hr.) I used a mild enchilada sauce, which turned out to still have a little kick to it, so I had to scrap and salvage the sauce-less loaf bites for my little one. Husband and I agreed that since it was kinda fall-apartey, that we would've eaten it in a tortilla w/ some melted cheese and been happier that way, than trying to slice and serve it like a traditional meatloaf. Still muy delicioso!

Spicy Turkey Chili Haiku: "Not sure about this. 'Twas a good, basic chili. But not that 'spicy.'" I guess the submitted expected one to use a certain kind of "chili seasoning mix", b/c, really, that's the only thing that would make this as spicy as she says it to be. I halved the recipe, using 3/4 lb. of ground turkey that I browned w/ the onion, but followed the recipe faithfully, only tossing in a near-empty bag of frozen corn. This is the kind of chili that would work really well on top of french fries, a baked potato, hot dog, or hashbrowns, as it's not really remarkable standing on its own, but it's, by all means, not bad. Bonus points for it being super-easy to make, but definitely not a chili for wow'ing a crowd.

Cuban Smoked Sausage with Chickpeas' Haiku: "This turned out so good! Just wish it had some color. But still, mmmarvelous!" The reviews complaining of this recipe being bland evidently didn't see the submitter saying, to add more of any seasoning to your taste, and frankly, I did just that, but I imagine it would be fine as written, since adobo seasoning and smoked sausage are both such flavorful ingredients. I halved the ingredients (for 3 people), added a bay leaf, 2 minced garlic cloves, diced yellow bell pepper, and surprisingly, swapping sherry for apple juice, as that's all that I had LOL. I let mine simmer for 1.5 hrs. so the chickpeas wouldn't be, as my husband calls them, "pebbley", and really, I thought this was pretty tasty, but just boring of color, so when I make it again, I'll have to throw in some zucchini, kale, tomatoes, or whatever for some additional color and zip.

Chocolate Zucchini Muffin Haiku: "Oh so tasty good! I took submitter's ideas, and changed a few things." I didn't feel guilty about altering/adding, as the submitter of the recipe gave some nice suggestions in his description, so I ended up doing half brown/half white sugar, added chocolate chips on top, as well as halving the oil and including apple sauce. These were incredibly moist and wonderful right from the oven, and just as great the next day lightly-toasted w/ butter. My daughter, a rabid despiser of zucchini, devoured these enthusiastically.
