Oven Baked Sweet Potato Fries Haiku: "Baked a bit longer, was hoping they'd 'crispify', but oh man great taste!" Not sure if there's a trick to getting sweet potatoes to get crispier when baked, but texture aside, the taste of these was fantastic. I see one review saying to cook a bit shorter, but I ended up baking mine longer and flipping them more frequently. Always happy to find a sweet potato recipe that's not bathed in sweet ingredients!

Grilled Baked Potatoes

Grilled Baked Potatoes Haiku: "This didn't wow us. Give me baked 'tater instead. Fun to try new way!" I was already grilling up other things so figured I'd have a go at this recipe too, rather than just baking the potatoes as usual. Took the near-unanimous reviewers' suggestion of microwaving the potatoes b4 grilling, but everything about the timing of the microwaving, or boiling, coupled w/ the grilling, still resulted in seriously underdone potatoes for us. Everything else grilled up great, but the potatoes were a major rock-fest disappointment.

Hot & Spicy Green Beans w/ Tomato Haiku: "This was just okay. Only swap was frozen beans, did the rest the same." Good but not extraordinary; we ate it alongside London broil and mashed potatoes, but agreed that we prefer AR's "Green Beans w/ Cherry Tomatoes."

Spicy Cajun Cabbage Haiku: "Barely kept this down. We like it hot in this house. But this was 'gritty.'" I made the entire seasoning blend, but only used half of it in the dish, and even used more than the suggested 5-ish c. of chopped cabbage, but this was nearly edible due to the "grittiness" of all of those dried spices. Thank goodness for the plain buttered egg noodles that I made to serve this over b/c they helped cut some of the spice and grit. Every bite, while super-spicy, was like eating on the beach w/ sand blowing in your mouth. I'm just glad that it was a cheap meal to make so I didn't mind tossing the leftovers.

Easy a la King Haiku: "Really needed more, like sauteed onions, garlic. But very easy!" The chicken that I used in this was ultra-flavored from a leftover marinated 'cue so I'm sure that added some oomph to an otherwise vanilla-sounding entree. But even w/o the chicken, my husband and I agreed that for the ease of putting this together, it turned out pretty tasty. Next go-around, I'll add some sauteed onion and garlic, for sure, and more than a dash of hot sauce ... and really, 1-star reviewer? 'Too many ingredients to make this easy'?

Hawaiian Sausage Skillet Haiku: "Husband adored this. Too much sweet and goopy sauce, I couldn't eat mine." Made this as directed only using a frozen bag of tri-color bell pepper strips, and starting to brown the sausage b4 adding the veggies so it'd get a little more brown and crispy, the way we like it. The sauce was just sooooo glossy and thick and syrupy sweet. My husband loved it, me, not so much. I'd have to change the ingredient ratio around in order for me to eat it again in the future, and possibly add a veggie like broccoli to make it more of a stir-fry meal.

Coco's Meatloaf Haiku: "Guess it's the puree. But my meatloaf was so moist, it just fell apart." Fall-apart-ey meatloaf makes me very, very sad b/c there's no hope for leftover meatloaf sandwiches the next day. I followed the recipe as directed but had to sub in 1 c. Ritz crackers. I let the meatloaf rest for enough time too, but it still just went to crumbles when sliced. It tasted fantastic though, so I'd gladly make it again, but maybe w/o the milk or the pureed veggies, if those were possibly the culprit for my mooshy meatloaf mush meal.

Soy & Garlic Marinated Chicken Haiku: "Good, not outstanding. It tasted just like its name, it's soy and garlic." Not mind-blowing, but super-easy to throw together, and resulted in a tasty chicken. With several ingredient additions, as many reviewers have done, the recipe becomes entirely different; as written, it's simple and good.

Sesame Parmesan Zucchini Haiku: "Way too much oil. Baking time was too long too. Squishy and greasy." So sad that our zucchini turned out to be an oily smoosh; guess I should've read the reviews about reducing oil and reducing either the temperature or the baking time. I prefer my veggies a little on the al dente side, but these zucchini slices were just way too mooshy for me altogether. I'd make again w/ all of the recommended edits.

Mexi-Quinoa Chicken Casserole Haiku: "More like a 'skillet' rather than a casserole, still it tasted good!" So "casserole" to me implies a baking dish that I can make again and put in the oven, so I prepared this just that way - made in the morning, covered, and then baked 350 deg. covered for 30 min., then added the optional cheese and uncovered for 10 more min. I also used chicken that I tore off a rotisserie chicken to make it even easier. Garnished w/ lettuce and avocado slices (and crushed Doritos for the hubs), the only thing that I felt like it needed was more than 1/4 c. cheese, and probably no need for the tomato paste (I think I'd use a can of Rotel next time around, along w/ some frozen corn for even more color.)

Delicious Fast Chicken Curry Haiku: "Should've been 5 stars! Potatoes not quite tender, and chicken was done." I made this recipe exactly as written, and the flavor was fantastic, but after 45 min., the cubed potatoes were still pretty rock-ish (disappointing!), so I made some quick rice to eat everything over instead, and we ate around the potatoes. I want to make this again, but would consider swapping the potatoes for garbanzo beans instead.

Marinated Grilled Pork Tenderloin Haiku: "Love pork tenderloin, especially when it's grilled. Tasty marinade." I wish I'd have marinated mine for 24 hrs. (more like half that time for me) b/c I can only imagine how much more flavorful it would've been had it had longer to penetrate w/ that flavor. Halved the recipe for 1 tenderloin that was a little over 1 lb. for 3 of us. Wary of the cinnamon, but used it, and everything else, as directed. Delicious marinade that I'm sure would be just as good on chicken, pork chops, or cheap steak.

Zucchini & Eggs Haiku: "Halved the recipe, was just me eating for lunch. Just needed color." Nice and easy dish to make, and while I ate some tomatoes on the side, I think adding diced tomatoes, (along w/ maybe onion and minced garlic instead of garlic powder) would've made these eggs eggceptional.

Salmon Cakes II Haiku: "Very good salmon. Used Ritz instead of bread crumbs, baked instead of fried." Other than subbing 10 crushed Ritz crackers for the bread crumbs, and baking 375 deg. at 15 min. per side, I followed the recipe as directed. Oh and I definitely chilled for longer than 20 min. to ensure that they'd be firm enough to hold together when flipped. They tasted great, but I actually preferred the one lone leftover patty the next day in an open-faced sandwich w/ tomato, swiss and pickle.

Mom's Polish Stewed Cabbage Haiku: "Ate with egg noodles. I used shredded coleslaw mix, instead of cabbage." For a time-saver, I used a bag of coleslaw mix, but did everything else as written, although didn't leave mine quite as long as 45 min. in dutch oven, only b/c I didn't want the cabbage to turn to moosh. Maybe it was the vinegar and carraway seeds (two things that I haven't used in all of the other cabbage/sausage recipes that I've had from AR), but something about this one didn't appeal to us quite enough to want to make again. Daughter only wanted the buttered egg noodles and the kielbasa, and husband didn't lunge at the leftovers the following day, so while we're cabbagaholics in almost all its forms, it's unlikely we'll make this recipe again.

Taco Salad w/ Spinach Haiku: "Desperate for more spice. Colorful and healthy, sure. Just needed some jazz." W/ only salt and chili powder going into the ground beef, one taste and I had to add a heaping scoop of AR's "Taco Seasoning I", and when I plated everything, I was tempted to add cheese and salsa, but wanted to follow the recipe as written. A lovely, light dish, but the spinach was disappointing, just laying all limp below everything else, calling out for dressing or something. I would gladly make this again, but would have to doll up the meat considerably, and use Catalina dressing or salsa on top.

Skillet Chili Haiku: "Missed the tomatoes. Just paste and sauce, not for us. Tasted pretty good." We eat ALOT of chili in our house, just about every Mon. trying out a new chili recipe, so I'm always happy to test out a new one. This skillet chili was very easy to prepare, and while this sounds cliche to say, it really didn't have that much depth. I don't need my chilis to have wacky, out-there ingredients to enjoy them, but nothing about this one was really mind-blowing. A decent chili that would be better on top of fries or a hot dog.

Used all of the ingredients as written, only my chicken was from a large batch that I'd prepared, shredded, and frozen previously in individual portions. We all ate this w/o murmurs of "mmms" or any enthusiastic praise, so it's unlikely it'll make another appearance in the kitchen, but I was glad to try out a new dish anyways!
