Dawn's Meatloaf

Reviewed: Oct. 20, 2014
Dawn's Meatloaf Haiku: "Mustard, oats were fun, different additions to try. Still a little bland." We enjoyed that that using mustard and rolled oats made for a more unique meatloaf taste, but it was overly moist and underly (is that a word?) flavorful. Making again would require a heavy addition of spices, and I would consider pulsing the rolled oats in food processor (or using quick-cooking oats instead) as I think the larger chunks coupled w/ the 1/2 c. of milk are what made this a very fall-aparty meatloaf.

The Ultimate Slow Cooked Chili

Reviewed: Sep. 16, 2014
Ultimate Slow Cooked Chili Haiku: "Halved the recipe, but still way too many beans. Good, not 'ultimate.'" The ingredient list is unneccesarily long, but I was faithful to it, only not using the optional red wine, and sauteeing the bell pepper w/ the onion, beef and garlic in step 1. It just seemed like so many of those ingredients either competed w/ the others, or were just straight drowned out by the others. Definitely not saying it wasn't a good chili, just not mind-blowing. Glad that it called for Ranch-style beans though; we love those!

Yummy Grilled Asparagus

Reviewed: Sep. 16, 2014
Yummy Grilled Asparagus Haiku: "Timing off for us. Our asparagus were hard, after 5 minutes." Well, maybe our asparagus were on the thicker side, and I should've checked them b4 pulling them from the grill and then serving them, only to find that they were still a little too on the al dente side. (I'd take a crunchier veggie over a squishy, over-done one, so I wasn't too disappointed!) Taste was good, and the recipe deserves thumbs-up for crazy-easy prep.

Perfect Baked Potato

Reviewed: Sep. 16, 2014
Perfect Baked Potato Haiku: "Hmm, what's 'medium'? Guess my potatoes were large, cuz they weren't done." Followed the recipe as written and was disappointed to find that after 90 min. at 300 deg., my potatoes were still pretty hard, so due to having the rest of dinner ready, I had to zap mine in the microwave for 5-6 min. to get them finished the rest of the way, which kinda-sorta killed the "baked" part w/ the crispy skin that I like so much. Don't get me wrong - a microwaved potato is still good once it has cheese and butter on it, but I guess this was one of those instances where I should've gone w/ my gut about how one person's medium is another's small and what-not, and gone w/ a higher temp. Still a tasty potato nonetheless!

Easy Mexican Goulash

Reviewed: Sep. 16, 2014
Easy Mexican Goulash Haiku: "This one surprised us! Made it like a casserole, baked dinnertime." Made this as written (using small can Mexi-corn instead of the frozen, and rotini instead of elbows) a day ahead in a covered pyrex and when it came time to prepare, I put the cheese on top and baked it 350 for about 20 min. covered, then uncovered for another 5-10 min. Even though it was a very easy dish to prepare, this way made my evening infinitely easier, which I need b/c I have a newborn, and have to make meals in advance. But we were really quite astonished as to how good this was, for the ease of preparation and for having the ingredients almost always around.

Quick and Easy Jambalaya

Reviewed: Sep. 16, 2014
Quick & Easy Jambalaya Haiku: "Four and a half stars! Really, this was outstanding. Just way too much rice!" Funny that other review says not enough rice, whereas I read 2 cups as insanely too much. Ended up making the rice (1/2 c. brown basmati, non-instant) separately to avoid it being smooshy or crunchy, and just stirring it in when we served the jambalaya. Really delicious, and very, very easy to make!

Krystal's Perfect Marinade for BBQ or Grilled Chicken

Reviewed: Sep. 16, 2014
Krystal's Perfect Marinade Haiku: "Can't say it's 'perfect', too much sesame oil, and too sweet for us." Sesame oil over-powered the flavor of the end-result chicken, which was also a little too sweet, in my opinion, so if I use this marinade again, I would greatly reduce both the brown sugar and the sesame oil. (As I've noticed several reviewers mention doing too.)

Ramen Noodle Stir-Fry with Chicken and Vegetables

Reviewed: Sep. 7, 2014
Ramen Noodle Stir Fry with Chicken & Vegetables Haiku: "Wow, this was awesome! Only changed two tiny things, but did rest the same." I didn't have quite 2 cups of broccoli, so I used asparagus to make up the difference. Didn't put the single wedged roma tomato in at the end b/c I thought it would just get lost in the all the other stuff (plus, I don't think tomatoes really jive w/ stir-fry flavors.) I'm not a fan of ramen on its own (well, since college days that is) simply b/c the flavor packet is just soooo SO strong, but it mellowed out when mixed w/ all these great veggies and chicken! And wow, it all came together wonderfully -- we absolutely loved this dinner! Next time I'm going to add some red bell pepper for a little more color, or try swapping chicken for shrimp or maybe try to a different flavor of ramen - seems like it'd be a fun recipe to tool around w/!

Vegan Gluten-Free Lactation Cookies

Reviewed: Sep. 6, 2014
Vegan Gluten-free Lactation Cookies Haiku: "Very 'wet' cookie, but I think they tasted great. Kept well in the fridge." Made recipe as written only I subbed 1/4 c. coconut oil & 1/4 c. applesauce for the peanut butter. The cookies completely fall apart after being baked, but I liked the taste alot, and I kept them in the fridge for a little over a week eating one in the morning, and one in the afternoon. Now whether or not they've increased my milk supply, I'm not sure, only b/c I'm also drinking Mother's Milk tea, and I made up a lactation zucchini muffin recipe too, but hey, if my baby's mursing well and I get to eat yummy things in b/t, then all is good w/ me!

Upside-Down Barbeque Meatloaf

Reviewed: Sep. 5, 2014
Upside-down BBQ Meatloaf Haiku: "Just put sauce on top. Didn't make diff on bottom, 'cept it swam in grease." The meatloaf itself tasted divine, but we didn't like the upside-down method w/ the barbeque sauce on the bottom; would've rather just done the normal ol' spread the condiment/glaze on top during its baking. Oh one random thing; what's w/ the ppl reviewing this 5-stars saying "sounds great, but haven't made it yet" - it's just as bothersome as poor reviews from people who haven't made a recipe yet b/c it's misleading to the average rating.

Emily's Excellent Taco Casserole

Reviewed: Sep. 5, 2014
Emily's Excellent Taco Casserole Haiku: "A little perplexed. Nothing 'taco' about it. But it still was good." I had a small tupper of leftover taco meat, so I layered it w/ the veg. chili, b/c "taco" in the title was misleading. My daughter said it tasted like "chili on a plate" which was fine by me b/c I tend to OD our family on weekly crockpot chilis. The chips on the bottom got pretty soggified, so next time I make this, will either serve w/ chips for scooping, or bake w/ chips on top.

Chicken Tortilla Casserole

Reviewed: Sep. 4, 2014
Chicken Tortilla Casserole Haiku: "Wants to be 'King Ranch', but falls short in several ways. Soggy, not so great." Not sure why it had to sit in the fridge assembled for 24 hrs. but I followed the recipe except using a can of Rotel tomatoes instead of a jar of salsa. It feels like a recipe that's similar to a King Ranch Casserole, which is why so many people say in their reviews that they added green chiles, I suppose. Anyways, the end result was fairly tasty but slippery and watery (would've preferred broken-up tortilla chips on top or something other than the layers of corn tortilla strips), so unfortunately we didn't eat the leftovers.

Blueberry Banana Oatmeal Smoothie

Reviewed: Sep. 4, 2014
Blueberry Banana Oatmeal Smoothie Haiku: "No sugar needed, if banana's super ripe. (Swapped flax for chia.") I'm not terribly fond of blueberries in smoothies, but my daughter wanted me to make this one for her, but all we ended up tasting was oats and bananas. It definitely had a "healthier" taste than most smoothies, but something didn't jive w/ me, and chances are, it was the blueberries. (DD; however, loved it.)

BBQ Chicken Tortilla Pizza

Reviewed: Sep. 4, 2014
BBQ Chicken Tortilla Pizza Haiku: "We weren't too thrilled. Earns stars for ease of making, but taste was so-so." Followed recipe exactly and these tortilla "pizzas" while super-easy to put together, but weren't outstanding b/c WW tortilla's don't tend to crisp on their own w/ all those ingredients on top, so we had to kinda scoop, half eat w/ forks. Maybe putting the same ingredients onto pizza crust or an English muffin; not sure, but it was fun to try!

Quick and Easy Black Beans and Rice

Reviewed: Sep. 4, 2014
Quick & Easy Black Beans & Rice Haiku: "Added smoked sausage. Used fresh cilantro, not dried. Rest I kept the same." I was skeptical of the seemingly strange combo of Cajun seasoning, cumin and cilantro, but somehow this all came together in a really delicious way! To make it an entree, I crisped 1 lb. sliced smoked sauce w/ the onion and garlic, and while the recipe didn't say to drain and rinse the black beans, I did so anyways, and sprinkled w/ fresh chopped cilantro (couple TB's worth) since I don't keep dry on hand. It WAS quick and easy, and better than that, 5 stars from the entire family, and no leftovers!

Spicy Unstuffed Cabbage

Reviewed: Aug. 7, 2014
Spicy Unstuffed Cabbage Haiku: "Halved the recipe, used all ground beef, no sausage. This sure makes alot!" So the submitter of the recipe is right; even in half, this makes a ton! As it resembled a cabbage roll's guts, I made rice alongside it for serving, but found that the leftovers the next day that had been mixed up w/ the rice, were far superior. Wasn't too thrilled w/ the heavy vinegar taste, and felt that it could've benefited from the addition of minced garlic, so when I make this again (which I will as we really did like it alot), I would serve it mixed w/, instead of on top of, rice, reduce the vinegar, and add garlic, and probably make a full batch, as I imagine extras would freeze nicely for a reheated casserole later on.

Lucky's Quickie Chickie

Reviewed: Aug. 7, 2014
Lucky's Quickie Chickie Haiku: "Needed way more sauce. Barely covered the chicken. (Didn't change a thing.)" A nice and flavorful chicken, but would've greatly benefited from doubling, or tripling the honey and balsamic vinegar. I loved the basil and the simple and quick instructions, but wouldn't make again without heavily increasing (or marinating with) the sauce.

PB-n-J Cups

Reviewed: Aug. 7, 2014
PB'n'J Cups Haiku: "Something 'off' bout these. Melt too quick & quite messy. Followed recipe." I didn't deviate one bit from the recipe, as it was easy and fun for my daughter to help out w/. We didn't let our impatience get the best of us, and allowed them to fully freeze, but even taking them out hours later and eating them by hand resulted in goopy, melty peanut butter all over us, which, while good-tasting, didn't quite jive with the strawberry part on top. Even though the instructions were simple, the end result wasn't anything that I think we'll do again.

Pasta with Spinach and Chickpeas

Reviewed: Aug. 7, 2014
Pasta with Spinach & Chick Peas Haiku: "Gotta switch pasta. Can't decide, use fork or spoon? Taste was pretty good!" I followed the recipe, using spaghetti instead of linguine (close enough) but we were ultimately discouraged at not being able to both twirl the noodles and stab/scoop chick peas at the same time. If I make this again, I would use a smaller noodle, and let the tomatoes and chick peas simmer longer b/c our chick peas stayed more like pebbles than we'd have liked for the mere handful of minutes that it simmered in the instructions.

Homestyle Chicken and Biscuits

Reviewed: Aug. 7, 2014
Homestyle Chicken & Biscuits Haiku: "Forgot to add milk. Glad I started biscuits first, made sure they were done!." Other than some garlic powder and dried parsley added to the soup/cheese/chicken/vegg mixture, I kept everything the same, but also took advice of many reviews saying to do the biscuits partially separate b4 finishing their baking time on top of everything. This was an easy and comforting dish, and one that I'll look forward to making again in the fall, although it could benefit from the additional of some sauteed onions, additional spices, and peas!
