Slow Cooker Turkey and White Bean Chili

Slow Cooker Turkey & White Bean Chili Haiku: "Took some time to prep. (Way more than 20 minutes.) But well worth the wait!" I halved the recipe, only having a 14.5 oz. can hominy, but it was definitely time-consuming to cook and shred the turkey breast, and blend the beans/broth/hominy. (I don't have an immersion blender, so I just dumped the cans in my regular blender, then poured it into the crockpot.) I was a little disappointed that the Cajun seasoning and serrano pepper flavor didn't come thru very strongly, but bonus points for that - my spice-averse-yung'in was able to devour her bowl. I think if I make this again, I'll wait til I have some leftover chicken or turkey to shred, increase the spices, and wait to put the cilantro in at serving. (It virtually disappeared into a faint afterthought.) Otherwise, a very tasty chili w/ a glob of sour cream, green onions, and a handful of crushed tortilla chips in the bowl.

Simple Sweet & Spicy Chicken Wraps' Haiku: " Epic wrap supreme! But would it be as good cold? Five stars and then some!" I would love to be able to make these wraps and take them to work for lunch everyday, but I'm not sure the chicken and tortilla would be quite as good cold. Putting that aside, this wrap was outstanding! I have a feeling that every sandwich I make for now on will include the cayenne/mayo/honey/cucumber instead of plain mayo. And yes, I know alot of people are snobby about canned chicken, but it was on sale, and worked wonderfully in this sandwich for me. My biggest problem was piling so much on my tortilla that I couldn't roll it neatly and I ended up demolishing my plate w/ sticky, sweet spicy fingers. Scrumptious!!

Beef Bourguignon II

Beef Bourguignon II Haiku: "What are canned onions? (I used frozen pearl onions.) Elegant, great dish!" My only regret w/ this meal was that I didn't have any egg noodles to serve it over, so instead, we licked our bowls and spoons clean and obliterated the whole thing. I'm anxious to make it again, although probably not on a 99 degree afternoon, since it goes from hot stovetop to hot oven for several hours, but holllly cow, this rocked! Oh and what in the heck are canned onions, b/c I know that it's not those little fried onion-ey things that folks use for casseroles. I used frozen pearl onions to absolutely fantastic results. DINNER WIN!

Mexican Tinga Haiku: "Terrific tinga. Simple, spicy flavor's great. Don't change a ThingA." I followed the recipe exactly, although I think I may have used 1/3 can of chipotles, knowing that otherwise, this would've had a bit too much of a punch for us. I thought that I'd serve it w/ a selection of toppings (grated cheese, shredded lettuce, chopped tomato, avocado and what-not), but truth be told, this was absolutely perfect served simply as written - w/ a plop of sour cream on top. Cannot wait to make these again!

Kielbasa and Kidney Beans

Kielbasa & Kidney Beans Haiku: "Gotta be honest, tasted like beanie-weanies. Sweet, BBQ-ey." Well, can't say that I'm surprised that my pre-schooler obliterated her plate b/c these tasted like baked beans from a can; sweet and syrupy. Take away the kielbasa, and I would have no qualms serving this as a side dish at a BBQ, but as far as entrees go, I wasn't blown away by it. I'm glad that I reduced the sugar to 2 TB, b/c I still found it too sweet. Otherwise, I followed the recipe as written, and I give it a 3 based on the ease of preparation, always having the items on hand, and enjoying a meal where I don't have to coax my wee'un into "here comes the airplane" while I urge her spoon towards her mouth.

Fresh Chicken Salad with Baby Greens

Fresh Chicken Salad Haiku: "So close to five stars! Just need to blend the dressing. Otherwise, superb!" I scaled this back to 1 serving for my lunch and used torn baby spinach and romaine. My only complaint w/ it was the instructions saying to drizzle the EVOO, balsamic vinegar and honey on before serving, b/c inevitably, my mouth ended up w/ a cloyingly-sweet honey bite, or a too-tart vinegar bite. This would be 5 stars, had I whisked the dressing together before adding it to the salad. But WOW! Such a simple mix of salad ingredients plus the pesto chicken - seriously tasty and something that I look forward to packing into my lunch for work.

Caribbean Jerk Pork Chops' Haiku: "Very tasty chops, but not as good as 'Jay's Jerk', also from AR." Really liked these alot (allspice in anything always gets my approval), but this marinade can't quite stack up to Jay's Jerk marinade, which is similar, but has extra punch and extra jerk-y goodness. Not to say that these pork chops weren't obliterated the moment they left the grill and touched our plates.

Spring Delight Salad Haiku: "It IS delightful. Vibrant colors and textures. But still needs some crunch." I loved the easy elegance of this salad, and the only change that I made was to swap raspberry vinaigrette for balsamic vinaigrette. Otherwise, stayed true to the recipe and definitely enjoyed it, but I think next go-around, I'll need to add something w/ a little bite to it, like red onion, toasted walnuts, or cucumbers. But I have to say that I love any recipe that has alfalfa sprouts in it!

Simply Delicious Ranch Chicken Salad Haiku: "It's simple to make. Not quite simply delicious. Still tasted okay." I had some chicken that I'd shredded and frozen in portioned bags, so after thawing one, I followed this recipe, but it was only so-so. Definitely needed some salt and more than a pinch of pepper. Still, when crammed into a pita w/ lettuce, tomatoes, pepperoncinis, it was fairly tasty - just not a chicken salad that I'd scoop up and eat by itself.

Peanut Butter & Jelly Pancakes Haiku: "PBJ pancake! Needs more peanut butter though. A fun breakfast treat." Made these as written, and wow did they smell good; I just wish they had more peanut butter taste! I warmed the strawberry jelly so that it would drizzle nicely, but I think when I make these again, besides increasing the PB, I think I'd rather bananas and perhaps a squirt of chocolate syrup on top. Now THAT's a decadent breakfast!

Firecracker Casserole Haiku: "Cute name, fun entree. I'll make again; however, I would make changes." I followed the recipe exactly, only I used a little less ground beef, and added a heavy sprinkle of "Taco Seasoning I" from AR. It came out a little watery and difficult to serve, and the tortillas in the middle were kinda a slippery afterthought. I plan on making this again, b/c the taste was spot-on, but I would combine the soup/Rotel w/ the beef and beans, and eliminate the tortillas, and instead, just serve it w/ crushed tortilla chips on top. Also making this extremely tasty was garnishing it w/ chopped lettuce, cilantro, and a blob of sour cream.

All Seasons Marinade Haiku: "Not making again. 'Pretty Chicken' is better. I'm glad that I tried!" AR's "Pretty Chicken Marinade" is far superior to this marinade, and of similar ingredients. Something about this one just made my stomach turn - the saltiness, the mustard, I'm not sure. I let some chicken bathe in it for awhile, and it certainly smelled nice while cooking, but my tastebuds just couldn't mesh w/ this particular blend of marinade ingredients.

Strawberry Muffins' Haiku: "Eek, too much nutmeg. Not enough strawberry jam. But they were alright." I wasn't blown away by these muffins; I followed the recipe exactly, w/ the exception of decreasing the nutmeg a bit, but it was still too strong. I thought that they might taste good w/ a smear of peanut butter, but turns out, they taste best w/, surprise, a glob of strawberry jelly.

Simple Spinach Salad Haiku: "Vibrant and unique. Almonds, raisins are a must. No need for bacon." I used all of the ingredients called for (minus bacon bits, blech), but my measurements were more of a chop-cut-add. I made the dressing to serve on the side, along w/ a choice of other dressings, to my BBQ guests, only b/c I was doubtful of how mayo/sugar/RW vinegar would taste together, and plus, mixing the dressing into all of the greens would yield soggy leftovers, if there were to be any. In any case, there weren't any leftovers of the actual salad, but nobody liked the mayo dressing, and instead preferred a balsamic vinaigrette.

Adobo Herb Salsa Haiku: "Increased cilantro. And I dropped the tarragon. Nice adobo kick!" I love the smoky bite and spicy aftertaste that the adobo sauce gave this salsa; I didn't deviate from the recipe, except to scale it to half, so that I only had to use a 14.5 oz. can of diced tomatoes. The longer it sits in the fridge, the tastier it gets, so aim for more than the recommended 30+ min. Simply scooped up onto tortilla chips, this is a tasty, and easy, alternative to store-bought salsa. (Oh, and as a random side note, once you open the can of chipotles to measure out the adobo sauce, the perfect sized container for what's remaining in the can is a leftover Spice World 8 oz. jar of minced garlic.)

Corn & Black Bean Salad Haiku: "Too much vinegar. Maybe add lime juice instead? Wasn't too impressed." I served this at a BBQ and followed the recipe faithfully, but despite everyone saying "mmm!", the bowl remained nearly untouched. I think the balsamic vinegar just threw the whole thing off, and would've preferred a little EVOO and lime juice in its place. The only thing I added was a little diced red onion. I'm going to yank the leftovers this afternoon and try to salvage them w/ more cilantro, diced tomato, lime juice and a bit more sugar, but I much prefer the similar AR "Super Summer Salsa" recipe to this.

Sue's Taco Salad Haiku: "I wouldn't use Ranch. Otherwise, a great salad. (Can't keep leftovers.)" I'm glad that I made it a build-your-taco-salad-station night b/c otherwise, leftovers for this wouldn't keep and the dressing and chips would soggify. I let my husband guinea-pig it w/ Ranch, and we didn't like that at all (although I'm intrigued by some of the reviewers saying that they mixed a little taco seasoning, or chili powder, into their Ranch), so I went w/ Catalina. I was smitten w/ this recipe, b/c my mother-in-law, whose name is also Sue, introduced me to making taco salad this same exact way. The only changes that I made (other than using Catalina) was to eschew taco seasoning mix for AR's brilliant "Taco Seasoning I", swapping Doritos out for reg. tortilla chips, and adding some red onion slivers. I'm happy that I separated the salad fixins' so I can take some to work tomorrow b/c this was very tasty.

Spinach & Whole Wheat Quesadillas' Haiku: "Healthy, tasty lunch. I wouldn't mind more veggies. But it was still great!" I followed the recipe exactly, only using Mexi-cheese blend instead of Cheddar. I think I would've been happier if I'd lightly sauteed some onion with garlic and wilted the spinach first, rather than using raw green onion and garlic powder, but my belly was still happy w/ the results. And giggle all you want, but I adore the "Xtreme Wellness High Fiber" tortillas (anything w/ the word "Extreme", or minus the "E", makes me shudder), but when they're grilled w/ tasty fillings, I can ignore the goofy name of them and revel in the fact that they're super-good for you.

Spence's Pesto Chicken Pasta Haiku: "This IS elegant. Flavorful, vibrant colors. A couple small tweaks." I was doubtful of putting that many "special" veggies all together, thinking their flavors would compete w/ one another, but it turned out to be a lovely dish. I didn't have quite as many mushrooms, and I had to sub hearts of palm for the artichoke hearts (close enough); I also added a handful of diced onion to the initial saute. Otherwise I was completely faithful to the recipe and was pleasantly surprised w/ the end result. When I make this again, I plan to increase the spinach, and stir a bit of the pasta water into the chick/vegg mixture for additional moisture b/c it was a bit dry. (Or instead of just tossing the linguine w/ the pesto, split the pesto into the chicken/vegg too.)

Extra-Yummy Fluffy Pancakes' Haiku: "Not 'extra-yummy', the cinnamon was too strong. But fluffy, they were." I should've known better than to dump a whole TB of cinnamon into this, as directed, b/c whew, that's all that I tasted. I figured w/ that being the dominant flavor, I'd eat them w/ hunks of apple and a drizzle of syrup, but I couldn't quite shake that overwhelming cinnamon taste. But the title including "fluffy" didn't disappoint - these were thick and filling, but nowhere near as good as the "Fluffy Pancake" recipe on here. Oh and I couldn't bring myself to use additional oil in the skillet, so I just went w/ a heavy squirt of Pam in b/t batches.
