About this Cook
I'm a video game nerd who has fun messing around in the kitchen.
My favorite things to cook
I love to make explosively-full omelets (especially at "brinner" or breakfast-for-dinner), anything in my slow-cooker, and Mexican-inspired casseroles.
My favorite family cooking traditions
My favorite family meals growing up were chicken & dumplings, blinis with applesauce, and pot roast with carrots and egg noodles. New traditions w/ my husband, daughter and I include nights of the week where one of us always chooses the menu, and one "free-for-all" night that I have off from the kitchen, and they can scrounge for leftovers. I also like using Sunday afternoon for making several days' worth of meals ahead to make work days easier.
My cooking triumphs
It was very intimidating to host my first Thanksgiving a la rock_lobster several years back, but it turned out successful and delicious, and now I'm always happy to pitch in at any holiday meal.
My cooking tragedies
I accidentally put sweetened condensed milk into a corn chowder instead of evaporated milk! /barf. Also, I was on vacation and had to make do with what the rented cottage had and prepared Paella in a big soup pot with ill-fitting lid. 2 hours later, and hungry folks nibbling hors d'oeuvres in anticipation of dinner, and the rice was half crunchy-disaster, half squishy pudding-consistency. Mistakenly bought puff pastry dough instead of phyllo dough for a slender, Nutella-filled dessert treat that ended up exploding into a dough-ey snake in my oven.

Kingman's Vegan Zucchini Bread
Kingman's Vegan Zucchini Bread Haiku: "With a few changes, made this lactation-friendly, retained a great taste!" Reduced sugars, subbed 1/2 the veg oil for coconut oil, added 1 TB brewer's yeast and 1 TB wheat germ, all in the name of amp-up-milk-supply coupled w/ mmm zucchini bread gooooood. OK, and a handful of chocolate chips didn't hurt either. I hope I don't get knocked for my additions, but I LOVE this bread. Froze one of the loaves and have found that it tastes just as good from freezer to toaster.

Zucchini and Eggs
Zucchini & Eggs Haiku: "What? Huh? So surprised! Such a cinch, and tasted great! I'll make all the time!" Other than adding parmesan cheese the 1st time that I made this, I followed this easy, excellent recipe as written. I've made it on several occasions now, adding in mushrooms and bell pepper, or cheddar and ham, but I think what makes it different than just scrambling eggs w/ zucchini is the method of laying the zucchini across the bottom of the pan before pouring the eggs in. Just wonderful!

Spicy Zucchini Oatmeal Cookies
Spicy Zucchini Oatmeal Cookie Haiku: "The taste was quite good, but baked up like 'muffin top', breakfast or dessert?" Recipe submitter says to drop these by rounded Teaspoonfuls which wasn't at all possible at all due to the sticky, clumpy oat-ey texture w/ the zucchini and raisins (oh, incidentally, I used 1/4 c. raisin, 1/4 c. chocolate chip) so I made mine into rather large balls, which baked into what I can only describe as resembling a muffin top. Many other reviews mention it being cakey, which is absolutely true so I found that these veered more towards a breakfast treat. To make these breast-feeding-friendly, I also added 1 TB brewer's yeast, 1 TB wheat germ, and half coconut oil for the butter. Very tasty right out of the oven yum yum!
