Honey-Mustard Salad Dressing

Reviewed: Jun. 8, 2011
Wonderful!! I recently had a Walmart brand honey mustard dressing and loved the flavor so much that I wanted to try my hand at making my own. This was the first recipe I tried and I love it! I used apple cider vinegar. It was a bit on the thin side, but I didn't mind cause the flavor's are great + this is healthy. Love it!!

Mother's Applesauce Muffins

Reviewed: May 17, 2011
These muffins were moist, delicious, and fairly easy. With a few alterations, they are perfect! Here's what I did: 4 cups white flour, 2 tbsp ground cinnaomon, 3 tsp baking soda (makes the muffins even more fluffy), 1/2 cup butter, 1/2 cup cane sugar, 1/2 cup brown sugar, 2 eggs, 2 1/2 cups applesauce, 2 tbsp vanilla, 1 1/2 cups raisins, & 1 1/2 tsp ground cloves. Mixed together and baked for 25 min these are so, so, so good!! Best eaten warm (I heated up for 30 seconds in the microwave). I also made up a batch substituting 3/4 cup honey for the 1 cup sugars and upped the applesauce to 3 cups - still turned out yummy and a great breakfast or snack food! I recommend you try these! Oh and the house smelled insanely wonderful while I was baking the muffins. Like fall, Thanksgiving, happiness.. :)

Chocolate Chip Peppermint Cookies

Reviewed: Nov. 17, 2010
This was an amazing cookie! I followed the directions exactly, and baked them for 12 minutes. The recipe yielded 21 cookies and were simply wonderful!! These make an excellent holiday treat, but honestly I would eat them any time of the year! I love chocolate a lot, so I was a little unsure about the peppermint, but the flavors blended perfectly and the peppermint was nice and subtle, not overpowering. I highly suggest you try this!!!

Banana Banana Bread

Reviewed: Oct. 15, 2010
This turned out very well. I only had about less than 2 cups of mashed banana, but it still worked. I took other reviewers' suggestions and added a splash of vanilla, 1 tsp cinnamon, and heaping 1/4 tsp each of ginger, nutmeg, and allspice; i threw in 3/4 cup of raisins too. I also spread a topping of 1 tbsp water and 3 tbsp brown sugar on top of the bread before baking. oh and cut the brown sugar down to 1/2 cup in the recipe. overall, very very tasty!!! and easy to make

Slow Cooker Chicken Dinner

Reviewed: Oct. 13, 2010
i'm giving this recipe a 3 because i made so many additions, i can't honestly say this original recipe was the best. However, by adding 1/2 onion, 4 cloves garlic, 1 cup corn, approximately 1 cup milk, and approximately 1 tsp each of black pepper and thyme, this soup was sooo good i could hardly stop eating it! Also, I only used 3 chicken breasts, 2 cans cream of mushroom soup (no chicken soup at all), and omitted the garlic salt. - i cooked in my crockpot for 4 hours and served with sourdough rolls.

Zucchini e Pomodori Gratinati (Zucchini and Tomato Gratin)

Reviewed: Oct. 13, 2010
this was amazing!i was a bit skeptical before trying this dish, thinking it might be plain or not filling enough... but boy was i wrong! I followed the directions as stated, but changed a few things to fit what i had on hand: i sauteed two large zucchini in olive oil and garlic, then layered that intermittently with 4 on-the-vine tomatoes and 4 slices smoked swiss cheese instead of the mozarella. i think that enhanced the flavor a great deal. (i layered from bottom to top though, not side by side). Layered twice then topped with 1/4 cup grated parmesan cheese and 2 tsp dried sweet leaf basil. I served over sourdough bread for a nice, refreshing dinner. I will definitely be making this again and would feel very confident serving this dish to guests. I highly suggest you try this!

Cinnamon Bread I

Reviewed: Oct. 5, 2010
This bread was EXCELLENT!!!! simply delicious. I took another reviewer's suggestions and substituted brown sugar for the white sugar in the topping (which i doubled). I also poured half off the batter into my loaf pan, swirled half the topping in, then repeated. Since I used a glass pan it took a bit longer to cook, probably more like an hour... BUT WELL WORTH THE WAIT!!! my family didn't talk for several minutes after I served this as we were all too busy eating! very good recipe, something i will make again; next time with some raisins or nuts sprinkled in.

Finnish Meatballs (Lihapyorykoita)

Reviewed: Sep. 30, 2010
These turned out wonderful! I was a little apprehensive before I made these as all other meatballs I have made have crumbled apart. However, these were perfect. Wonderful flavoring, stayed intact, and smothered with a creamy sauce. I put these over chapatis with a side dish of cranberry sauce - perfect Sunday brunch. Oh, I also took another reviewer's suggestion and used evaporated milk in place of whipping cream; turned out nice and thick.

Lemon Streusel Muffins

Reviewed: Sep. 30, 2010
These are by far the best muffins I have ever made. They were perfect as I was looking for a lemon muffin recipe that didn't call for lemon yogurt. These still turned out moist and delicious. I did have to cook them longer than called for - I think it ended up being right over 30 minutes. Well worth it!

Yum! I made these with regular rolled oats (not instant) and they still turned out great. The whole family loved them.

Applesauce Bars

Reviewed: Sep. 30, 2010
The title was rather deceiving as I was expecting a healthy treat with a hint of sweetness. These turned out more like a cake with frosting. Still very good, just wouldn't title them "bars". I made the bars exactly as written and would definitely make these again, but next time would play around with the ingredients a bit and mix things up.

Chicken Linguine a la Me

Reviewed: Sep. 9, 2010
Very good recipe; i made several substitutions as i didn't have all the ingredients on hand. First, I sauteed 1/2 a yellow onion and the 5 garlic cloves in 2 tbsp butter. I omitted the mushrooms and broccoli, but added 1/2 bag of frozen peas. Instead of adding the chicken broth in with the veggies, i gradually added the broth to the butter/flour mixture in the saucepan; also added about another 1/4 cup of flour to even the proportions out. My whole family liked this meal, and I would definitely make it again!

Mild Cheesy Chicken Enchiladas

Reviewed: Jan. 22, 2010
My whole family loved these enchiladas. It was a great way to make delicious enchiladas without using store-bought sauce. The chicken did tend to dry out, so maybe next time I'll try marinating it in...something!? Not sure what yet! Overall, it was an easy, tasty meal that I'll definitely make again.

Delicious Black Bean Burritos

Reviewed: Jan. 22, 2010
this was an EXCELLENT recipe! it was a perfect combination to create a mouth-watering, honest-to-goodness burrito. I didn't have all the ingredients on hand, so I switched the jalapeno peppers for 1-2 chipotle peppers with adobo sauce. And I cut out the cilantro. My only complaint was that the recipe did not fill that many burritos - so next time I make this, I'll definitely increase the proportions. Very, very GOOD!!
