Cuban Midnight Sandwich

When shopping for ingredients for this sandwich I saw Boar's Head "Jamaica Jerk Turkey" behind the deli counter. I sampled a piece and knew that this would be a huge difference maker. Well, it was OUTSTANDING... just the right amount of kick to give this the Cuban zing that it deserves. That's the only change I mind to this great recipe. Thanks for sharing!!

Salmon Pasta Salad

What a great way to enjoy fresh salmon! I was able to get fresh Sockeye Salmon, which I think was a difference maker. I followed the recipe other than a few slight changes. I substituted olive oil for the vegetable oil, I added 1 red bell pepper, sprinkled a smidge of oregano and I added a generous handful of shaved Parmesan cheese. I am telling you this was just fabulous! My husband gave the best review from his repertoire, calling it "restaurant food". Thanks for the great recipe and all of the great tips!!

Pasta Primavera with Italian Turkey Sausage

This was out of this world! Like others, I used a splash of chicken broth because it's what I had on hand. It's the perfect summer meal. Thanks for sharing!

Pumpkin Black Bean Soup

This was very good!! I agree with other posters regarding spices. I added Cumen and Curry, and upped the onion and garlic by about 50% based on our tastes. A lovely Fall meal.

Mexican Chicken and Tomatillo Stew

I followed this recipe exactly and it was WONDERFUL!! My husband loved even more than me... he asked me to keep it in the rotation :). It's uniquely flavorful and more than enough for a meal. Since I never used Tomatillos before I bought way too many. You only need 2 good sized ones for 2 cups. Thanks for sharing

Almond-Crusted Tilapia

This was just excellent! There are enough positive comments for you to choose from - suffice to say that I made this dish in record time for me, and even if my husband likes something I'm still pretty critical. Not this time!! In terms of ease, time, flavor, as well as ingredients readily on hand, this was an excellent recipe. Thanks!!!
