Stuffed Eggplant with Shrimp and Basil

This was absolutely delicious. I did end up with only 3/4 cup bread crumbs because I didn't want to open a new canister. I shredded the parmesan and infused the basil with the olive oil before putting it into a hot skillet. For all the nay sayers I believe you probably used the parmesan from a canister that would add to the dryness you're all complaining about. The only thing I would add is some onion to the saute. Thank you for sharing.

Raspberry-Orange Chicken

Made as written and I don't care for this recipe. I've got 3 more batches to go...with changes...because I have that much chicken to work with. I'll update with the results. (Back off the cornstarch and red wine vinegar is my first suggestion.)

Quick and Easy 20-Minute Chicken Posole

Tasty! I left out the oregano (didn't have any) and used real halapenos (don't keep canned chili's on hand either). This was given a high five in my house and will definately make again. Thank you for sharing and yes...can be made for unexpected guests in a flash.

Baja Stuffed Potatoes

These were awesome! Take to heart though when it states LARGE potatoes, or reduce the corn and peppers to 1 can each. I like spicy but it was a bit much but well worth a second, third or forth attempt. Will definately put this in the keeper file. Hats off to Paul for his creativity.

Jimmbo's Garlic Knots

These are very good. I did not get 24 out of the 10 oz. pizza crust but it's still a work in progress. I did take the advice of other reviewers and, instead of putting them on a greased sheet pan, I put on the olive oil mixture (which had been infused in the olive oil for over 4 hours) while cooking and then added the additional ingrediants, after the initial cook time. The smaller ones I was told needed more time, the bigger ones were too done. I'll update as I try this again. Thanks for an alternative tho Jimbo.

Slow-Cooker Chicken Tortilla Soup

This is good...tastes like a vegetable soup I make with hamburger so I can't call it outstanding. If making your own tortilla strips I recommend using the Jalepeno-Cheddar wraps to add some zing. Blue corn chips are also good. I will cut back on the amount of chicken broth though and add diced jalepenos to kick it up a bit. Nice base recipe.

This is fantastic!!! Will add green pepper and onion next time with the egg mixture. Don't know if the cream cheese is really necessary but I always stay true to the recipe until I've tasted it. Thank you for sharing.

Burgundy Lamb Shanks

I'd give it 10 stars if possible. I did not cook it in a sloooow cooker but had it out in 4 hours and fall off the bone is true. This is awesome and recommended. Additionally I was told this is restaurant quality. Thank you for sharing.

Caryn's Chicken

This was not very pleasing to other household members when cooked strictly by the directions. I had to do some major tweaking to make it edible. I added 3 tbls of brown sugar, a couple dashes of soy sauce, a pinch of sea salt and the defining ingrediant was 1 tbls of capers. After all that it then given a thumbs up thus the 1 star for the original directions;3 stars after customizing it.

Easy Spicy Chicken and Rice

Received 5 stars from my family. I do think I'd cut the rice down to 1/2 cup though. I like it more spicy so I used pickled jalapenos. I added a side dish of sauteed red peppers, bacon, onion and cauliflower. Rave reviews.

Salmon and Spinach Fettuccine

Back away from the capers and oregano...made it twice in two days...wonderful after the alterations. Will throw the sun-dried tomatoes (homemade the next time) in early for more flavor. Very nice recipe all round though. Thank you for sharing.

Lemon Mushroom Herb Chicken

I told myself I'd grown out of using soup as an ingrediant but this was so easy and very good. Enjoyed by all. I will most likely add fresh mushrooms next time to add more texture. Wild rice as a nice side for this.

I love shrimp but this recipe is sorely lacking in flavor...I added red pepper flakes to offer something that would step out of the bland. Will make again with adjustments.
