Chocolate Texas Sheet Cake

I would give this more stars if I could. It was awesome. I was craving an easy chocolate cake one afternoon and made this recipe without the frosting. It was just delicious, I'm already planning how many other ways I will make it (cupcakes, grooms cake, etc).

Soft Zucchini Spice Cookies

Very good healthy cookie. I also had to cook mine for closer to 20 minutes to get them the least bit brown on top. I tried adding a handful of oats to one batch and that was yummy too.

Pumpkin Tea Bread

This recipe is really good. I made some changes. Ended up using whole wheat flour instead of regular. And didn't use quite as much sugar - 3/4 cup white and 1/2 cup brown. Added just the orange juice (fresh squeezed) but not the zest. Finally, I added 1/2 cup flaked coconut instead of the dates and walnuts. Also added a teaspoon of vanilla and a touch of ginger. Yummy! Works well as muffins too.

Veggie Burgers

These are amazing! What a great recipe, I plan to make again and again. I followed exactly except used 2 yellow squashes instead of zucchini. I plan to try substituting different recipes. When I first mixed it and made patties it seemed like it wouldn't hold together but they cooked up perfectly and have a great consistency.

Almond Shortbread I

I didn't trust it b/c the dough was so sticky and I had to add a LOT of flour while rolling out -- but these came out absolutely delicious. Delicate and melt in your mouth.

Chewy Brownies

First of all, it's cake, not brownie. Second of all, the finished product tastes like you're eating vegetable oil -- and I only used 1/2 the vegetable oil called for (substituting the other 1/2 w/ vanilla yogurt). Will not make again. (And I followed the recipe exactly and bake all the time).

Slow Cooker Chicken Parisienne

I didn't think the sauce was very tasty. I expected a creamier sauce using the mushroom soup, but it really wasn't liquidy or creamy at all, just kind of sat atop the chicken. I don't think I'd make the same way again, not without significant changes at least.

Sour Cream Cookies I

These cookies are great! Absolutely perfect to serve with coffee or tea. They just have a hint of sweetness and have a nice cakey texture but are still quite sturdy and hold together. I used light sour cream and cinnamon instead of nutmeg. I think any spice would be really great, next time I'll add more cinnamon or maybe try the nutmeg also. Great little cookies and super easy recipe! A recipe I'll definitely make again and again.

Slow Cooker Venison Roast

This is a great starter recipe. Taking others' suggestions, I added a cup of red wine and a cup of beef broth. I didn't think it came out w/ too much liquid -- there was enough to make plenty of gravy. I also added about 5 red potatoes, a handful of baby carrots, an onion, and some whole mushrooms. Delicious meal for the week!!

Turkey and Quinoa Meatloaf

This recipe is fabulous. As my husband said "you've made me lots of meatloafs and this is by far the best." It came out with such a great texture, I far prefer it to all other meatloafs. Also, I love recipes that are nutrient/vitamin rich, so making this with quinoa is just one more plus. I followed the recipe exactly except I used ketchup instead of the tomato paste. Everything was right on, and I'll be making this over and over again!!

Chilean Dobladitas

Pretty close to the real thing. My husband is Chilean and this is his favorite type of pancito, the one he misses the most now living in the U.S. He was really happy with these! They didn't come out quite as thick, buttery tasting (the ones in Chile really are like eating slices of butter almost), but I was impressed at how well they came out, and what an easy recipe! Next time I may try a shorter cook time...

Tortilla Espanola (Spanish Tortilla)

Really yummy! I didn't think I could successfully flip it, but the 10 minute estimate was right on, the bottom was set and browned, so it easily stayed together. Great recipe, will be making again and again! Perfect for when large bags of potatoes are on sale for cheap!

Chocolate Chip Cookies Lite

They taste like stale pancakes. I followed the recipe exactly, but they are spongy (but not in a good way) and flavorless. I'm all about trying to make desserts healthier, but this left me thinking: better to just eat the full-fat chocolate chip cookie and then hit the gym. I threw the batch I made out. If you do make them, be sure to grease the cookie sheet because they stick to it and are very hard to get off (prob. because they have no butter in them).

Grilled Chicken and Portobello Lasagna Rollups

This was EXCELLENT! I'd give more stars if I could. I made it with whole wheat lasagna noodles and half portobello and half regular mushrooms. My family just loved it and I will make again and again.

Peruvian Aji Sauce

This hot sauce is amazing. I added a little garlic and next time will add some onion. Outstanding flavor. I didn't think it needed as much mayo, but it's great b/c you can play around with the consistency you want -- great flavor!!

Strawberry Cheesecake

This was a great recipe. The crust was amazing (although I ended up doubling the crust to hold all the cheesecake). I usually have problems with my cheesecakes cracking, but this one didn't, and I cooked as directed. Cook time was spot on. The only change I made was I couldn't find sweetened strawberries, so I made it with unsweetened and added about two tablespoons of sugar. The cheesecake was not very sweet, but I actually was glad, it was much lighter. I also used both reduced fat cream cheese and non-fat condensed milk, and everything still came out great!

Cake Balls

I was not impressed with this recipe at all. I have made recipes that require dipping in baker's chocolate before, but this was a disaster. The cake balls totally fell apart, which ruined the melted chocolate. On top of that, I decided a store bought cake mix and store bought frosting didn't even merit me trying to save it...flavor was nothing special.
