Yucatan Potato Salad

This was the perfect side for my Labor Day BBQ. I wanted something a little different and this was it. The lime dressing made it nice and zesty and I loved the idea of adding chiles and green olives. I will be making this again. The only things I did differently was I used red onion instead of white, added a little bit of fresh cilantro and to the dressing, added a teaspoon of Good Seasons Italian dressing mix. I really enjoyed this salad and so did my family. Thanks Lars.

Autumn Muffins

These muffins were so good, nicely spiced and so easy. I actually used a bag of dried fruit in place of the fruit on this recipe and they came out delicious. Moist and fruity. I will make these again. Thanks.

Applesauce Bars

These were one of the easiest desserts ever. They were very moist and so delicious. I took them to a work gathering and some people thought they were pumpkin bars. I will make these again for sure and next time try nuts on the topping.

Doctor Bird Cake

I loved this cake. The pineapple was a great addition. It was so moist and easy. The only thing that I would watch is the time. Mine cooked in only 1 hour in my bundt pan and was perfect. Thanks for this one.

Black Bean and Couscous Salad

I've recently started preparing couscous and love it, my 6 year old even likes it. This recipe is incredible. I shared it with a co-worker and she also thought it was great. Last time I made it, I added some cut up hot link sausage for a main course. Boy was it good, I ate it for 3 days. Makes alot!

Calico Squash Casserole

I assumed this recipe would be soggy because of the squash. Boy was I wrong! This was one of the best veggie dishes I've ever made. It was a hit at our Christmas dinner last night, the dish was scraped clean. I love this recipe.

Mary's Roasted Red Pepper Dip

This was amazing. I prepared it the day before and took it to a friend's house, heated it up and we devoured it. We all loved it and I had to pass out the recipe. I roasted my own bell peppers instead of using the jar. I used 2 but I think 3 would have been even better. Yummy Yummy!

African Curry

After visiting a Thai restaurant and experiencing a delicious coconut curry dish, I immediately searched for a recipe that would duplicate it. To my surprise I found this wonderful recipe that was right on!!! I did add some cooked cubed pototoes, carrots and some frozen peas. It is sort of stew-like. I served it with rice. Thank you for this yummy new recipe that I will keep and make again and again.

Cranberry Bars

I actually couldn't find cranberries when I wanted to try this and substituted blackberries instead. It was really good. I also drizzled a sugar glaze on top and it made a great presentation. Loved it, thanks.

Ali's Green Sauce

This had great flavor but I thought it had too much sour cream. I thought it would be like a salsa it was more like a dip. Next time I will use only 1/2 cup of cream and add more if needed.

Persimmon Bread I

This recipe was great, BUT, I'm sure glad I only set the timer to 55 minutes instead of 75. It was on the verge of burning up. I think I will keep an eye on it after 40 minutes. Other than that it was a delicious extremely sweet bread (I may also cut the sugar next time too.), everyone loved even though it was well done.

Easy Cinnamon Fudge

This was an easy, quick and really good fudge. It has a smooth, light cinnamon taste. It's not quite as good as conventional fudge using condensed milk but it was second best. I will make it again for sure. This recipe doesn't make a lot of fudge, I would probably double it next time. I used a whisk to mix it together to eliminate any lumps. It also needs to stay refrigerated, as it gets super soft when it stays out for more than an hour.

Fiesta Shrimp Appetizers

I was so excited to try this and was so disappointed with the outcome. It didn't have much flavor. I followed the recipe to the tee and it just didn't do it for me. I had to dunk it in hot sauce to give it some kind of flavor. I will not try this again.
