Slow-Cooker Pepper Steak

This is fantastic. A family favorite for sure. I've tried cooking it by adding the peppers late so they are a bit firm and throwing them in at the beginning. The flavor is far superior when they are thrown in at the start - they add a lot of flavor and tenderness to the meat. I used STEW MEAT which saves $$. Just trim it against the grain and proceed Absolutely will melt in your mouth. Bon Apetite!!

Salsa Chicken

Just made it. Super simple, my 13 year old threw it together. My husband said "I want this for my birthday. And Valentine's Day. And Martin Luther King Day. And Easter...."!! Our salsa turned to liquid, so I was glad to have extra salsa to serve it with.

Yummy Sweet Potato Casserole

My brother-in-law said these were to sweet but NOONE else agreed with him! They were the first thing to disappear from Thanksgiving Leftovers. I combined the ingredients the night before to make it easier in the rush of getting the meal on the table. My only complaint is I don't think it really served 12 - I would make a lot more next time.

Smashed Potatoes

I made these three times the first week. My family inhales them. Like others, I mash up the taters a bit and stir with the seasoning, then bake. Prepare to give them plenty of time to get crispy on the edges. These potatoes should have a much more elegant name, because they truly are amazingly delicious.

Asian Orange Chicken

My apologies, this is not an actual review of the recipe. It is to tell you what not to do. I did not want to coat and fry the chicken, so I used this as a marinade and grilled the chicken. The flavor of the marinade is not quite right for this. It is a very strong orange flavor. If breaded and fried I can imagine it quite good. It was ok but not great. Just fyi - if you're going to marinade chicken in this, bread and fry it.

Mahi Mahi y Mango Salsa

Whole family loved it, and it was pretty simple. I'd never made fruit salsa, anything blackened, or Mahi Mahi, but it all worked great, and I was exhausted when I started. I used Toms Blackened Seasoning from this sight.

Super-Simple, Super-Spicy Mongolian Beef

"EVERYONE LOVES IT!!" was my husbands report. I used London Broil as it was cheaper, scored the beef and marinated for 8 hours. Cooked on grill, delicious!!! We boiled the marinade to serve on the side. Truly wonderful, yummy dish. We did not decrease red pepper, actually increased it. I didn't have hoisin so I used garlic chili sauce and some molasses. I had it cooked on the grill cause I prepped but the husband cooked it while I was at work.

Hamburger Steak with Onions and Gravy

The whole crew gave three cheers for this recipe. I did make one mistake. Because I made a large amount, I cooked the burgers first, then the onions. The onions loosened up all the yummy stuff that was to have gone into the gravy. So if you need to do the onions separate, cook the onions first then the burgers. Then you'll have all the bits for your gravy.

Pecan Breaded Chicken Breasts

The whole family enjoyed this very much. I listened to another reviewer and used MOntreal Steak Seasoning but we all agreed that it detracted from the maple/pecan flavors. The strong pepper in the Montreal was to much. Next time I would cook as written. I cook for 5 big eaters so to speed the process along I browned in the pan and finished in the oven - worked well. I also tried cooking some only in the oven and that worked well, too. A very different texture and color but nice in it's own way.

Chicken Breasts Pierre

This was fabulous. My 8 year old literally licked her plate. I made as written except added some red pepper flakes and much more hot sauce. Also added the step of frying some onions. I object to the name, though - I think we're going to call it "Chicken Zip" cause it is so delicious. Next time I may just toss it all in a crock-pot - frying up the chicken first doesn't really fit into my schedule. Thanks for a great recipe!!

Garden Fresh Tomato Soup

My family all enjoyed this. We made as written, however, I had to used canned tomatoes - I like Hunts whole tomatoes - I used 2 cans per recipe but needed to increase the sugar and salt a bit. Even with canned it was yummy. I used a submersion blender and did not bother to use the food mill OR make the roux - just cooked as directed, blended with a hand blender, and put it on the table. Very good!!

Ground Beef Vegetable Soup

This is a huge favorite at our house. I do add beef broth for sure. Also hot sauce! I make a huge pot and then freeze some. We've gone on vacation with a gallon zip-lock of frozen soup and had a wonderful dinner when we arrived at our destination. Love it!!

Alyson's Broccoli Salad

I made this when a vegetarian was joining us so left out the bacon, and it was still wonderful!! Might try with Apple Cider Vinegar next time for some additional tang. Enjoy! Oh, I also only had almonds so toasted and chopped some and they were great!!
