Mushroom Lentil Barley Stew

Very good soup! I substituted homemade mushroom stock in place of the vegetable broth, portabella mushrooms because those are the only kind my husband will eat, and a chopped fresh onion for the flakes. I used 1/2 the pepper based on other reviews and it was just right. Even better the next day!

INCREDIBLE Raspberry Cheesecake Cookies

I used fresh raspberries, chopped and gently folded into the batter and these were delicious. I liked the cakey texture. Definitely had to watch them closely to figure out when they were done. Good recipe, thanks for sharing.

Blueberry Scones

Great recipe; I don't like my pastries too sweet and this was a perfect mixture. I substituted 1/2 c. of low-fat yogurt for the cream, and just added a little skim milk as I was mixing the dough until it came together. I also tried a batch substituting 1 c. of whole wheat flour--delicious!

Mini Ham, Swiss, Rye Sandwiches with Cranberry Onion Relish

I found this recipe because I was looking to replicate a cranberry onion jam I had in a restaurant. I don't eat ham but the relish was perfect for turkey sandwiches.

Beet Bundt Cake

Wonderful cake; moist and delicious! No one can believe it has beets in it. I add 1 - 2 tbsp cocoa powder and sometimes 1 c. chocolate chips. (We are a chocolate-oriented family!)

Cinnamon Raisin Bread II

Delicious! I used 3 1/2 c. of bread flour per the recommendations of others; it was a perfectly sized loaf and had a nice "bready" taste and texture. This will be a staple in my bread machine rotation.
