Savory Bacon Cheddar Corn Muffins

I'm a newbie to making cornbread anything but I wanted to try this recipe with the rest of my southern-style New Year's dinner. Very glad I did! I could only find an 11.5oz package of cornbread mix so I used that and doubled all the other ingredients. I also added a large handful of sliced scallions (green parts only). Also, the cooking time wasn't long enough for me (but it could just be my extremely old oven). So I baked regular sized muffins at 400 for 15 minutes then turned down to 375 for 3-4 minutes and they were cooked all the way through without being dry. This made 18 muffins with the doubling. Next time I may add a pinch of salt to the batter as well, but overall it's a great recipe. Thanks!

Easy Lemon Cookies

I tripled the lemon extract and dusted the tops with powdered sugar after baking. Pretty, and they have a great texture (a bit of crisp on the outside and chewy on the inside). And a nice lemon flavor - even with triple the extract it wasn't overwhelming. Great recipe.

Iced Pumpkin Cookies

I used the changes that Bub suggested and they are outstanding. A nice change from my other Christmas cookie recipes which tend to be rich and chocolatey. Like someone else said, this is an excellent cookie to have with coffee. Definite keeper, thank you!

Chinese Christmas Cookies

I doubled this right off the bat. My family is not crazy about peanuts so instead of 2 cups I used a cup and a half and an extra half cup of noodles. Next time I may omit the peanuts or substitute something else. I did not use the microwave shortcut to melt the chips and it set up just fine. Even after coming back to room temperature after the refrigeration time, they were perfect-no problems with the chocolate getting melty. This will be added to my Christmas baking repertoire. It's nice to have a great recipe for something unique!

Peanut Butter Cup Cookies

This is an excellent cookie...peanut butter cookie paired with candy-how can you NOT like it? Unfortunately, 8 minutes was not long enough and of course I didn't notice until I tried one after the batch was done. And you can't cook it longer once your peanut butter cup is in it or else you'll have a mess. Next time I'll try 9 or 10 minutes to avoid that bit of raw cookie dough. Still tastes great.

Original Ranch Crispy Chicken

This recipe is pretty good and a snap to put together. I used a package of 5 drumsticks and coated them all with some sour cream (I didn't even bother trying to bread the chicken without it). Then I shook the chicken in a gallon size ziplock bag with a cup of Italian-seasoned panko and the packet of ranch seasoning. Baked at 375 on a rack for 50 minutes and flipped half-way through (although I don't think the flipping was really necessary). I was worried that the seasoned panko would be overkill with the ranch but was pleasantly surprised. I really liked it. It's not a knock-your-socks-off dish but it's definitely good and the prep is super-quick. Oh and the chicken was perfectly juicy, maybe from the sour cream like another reviewer suggested. I will make this again.

Chocolate Zucchini Cake III

I've made this cake several times and it's fantastic. The zucchini just melts into it. You'll never be able to tell it's in there.. I do leave out the walnuts, and I now omit the cinnamon as well. It's good with the cinnamon, but I found I don't really care for the combination of cinnamon and chocolate. Great recipe.

I've made this several times. Like others, I pre-bake the crust a few minutes and make extra gravy. It's just delicious and leftovers don't last longer than lunch the next day.

Easy and Elegant Pork Tenderloin

Even with seasoning the meat, using panko,, tenting with foil and using a rack to keep all sides crispy, my family and I just didn't love this. It was juicy enough (I took it out at 150 degrees and it rose to about 162 after sitting), but it just didn't appeal to us. Probably won't make it again.

Sam's Famous Carrot Cake

This was my first try at carrot cake. I made it for my mother's birthday...Mom likes carrot cake but nobody else in my family does. Not only did my mom say it was the best carrot cake she's ever had, but my 3 brothers and step-dad raved about it as well. This is a must-try recipe! I omitted the raisins and walnuts (had none) and coconut (Mom hates it). I increased the carrots about a quarter cup and baked it in two 9" cake pans, it was done in about 40 mins. After icing with a cream cheese frosting, I lined the top with sliced, toasted almonds. I did that for the presentation but they really complemented the flavor of the cake - too bad I didn't cover the whole cake with them (or use walnuts!) Even with the changes, it came out awesome. Thank you for the outstanding recipe.

Tiramisu II

Excellent!! The only change I made was drizzling a little Godiva white chocolate liqueur over the coffee/rum soaked ladyfingers. My fiancé ate the ENTIRE thing and has requested it again for his birthday in a few weeks. Thanks so much for the recipe!

Spinach Quiche

This was my first time making quiche and my fiance, 7-year-old and I LOVED it. I left out the mushrooms, added bacon bits and prebaked the pie crust for 5 minutes or so. It was perfect. We're even planning on using this recipe to serve at our wedding reception. Thank you!!
