Melt In Your Mouth Toffee

This is the easiest candy that I have ever made! I could not believe that I did not have to stir it. I was worried that it would not turn out but it was great. I cut the recipe in half and poured it into a 13x9 dish. I then topped the toffee with chocolate chips, let them melt, spread them with a knife and then added chopped almonds and pressed them lightly into the chocolate. It turned out perfectly! My husband loves it and he does not even like candy. I know I will be making this candy often!

No-Fuss Cinnamon Cheesecake

I took these to a potluck and everyone loved them! I even got a few requests for the recipe. My husband took the leftovers to work the next day and they were a huge hit! These will definately be a staple dessert in my house from now on.

Portobello Mushroom Caps and Veggies

This is a great new way for me to cook portabello mushrooms. I served each mushroom over a small bed of spinach and sprinkled each with balsamic vinegar and parmesean cheese and served with a side of warm lentil stew. An awesome vegetarian dinner!

Cocoa Rum Balls

These were awesome when made with the orange juice! I was looking for a way to make these without the rum and they turned out great! The best way to crush the wafers is in a food processor.

Chocolate Eclair Cake

This dessert is one of the best I have found that is so quick and easy! I used fat free pudding, skim milk and lite whipped topping and it was still rich and delicious. I made it the night before as suggested and served it cold right out of the refridgerator. I doubled the glaze recipe which was a little too much so next time I will make 1 and 1/2 the recipe as others suggested.

Lentil Soup

This lentil soup is excellent! Definately one of the best I have found, although I did have to make some changes to suit my tastes. I used 4 garlic cloves instead of 2, added 1 teaspoon each of cumin and curry powder and used 2 cups chicken broth and 6 cups water. Turned out very good and flavorful. I also did not see any reason to use so much oil, so I cut that back to 1 tablespoon and that was plenty to saute the vegetables. The addition of spinach is wonderful and the use of balsamic vinegar really makes a differance. Wonderful soup recipe that I will keep on using!

Award Winning Soft Chocolate Chip Cookies

This is definately the BEST chocolate chip cookie recipe I have ever made! They are so moist and they stay that way for several days, if they last that long. I will never go back to my old recipe again.

Pasta Primavera Sauce

This is the best vegetarian pasta sauce I have had! I used tomato sauce instead of tomato paste but it turned out too runny, I will definately make it with paste next time. I also used 4 cloves of garlic instead of 2 because we love garlic. I served it over wheat pasta and it was great! From now on I will use this recipe for pasta sauce, I will never go back to bottled sauce again! Well worth all the chopping.

Baked Soy Lemon Chops

This is the best pork chop recipe I have ever tried! I used reduced sodium soy sauce and did not have a problem with it overpowering the dish. I used boneless pork chops and it only took about 25 minutes to cook. I baked the chops in the marinade and it was absolutely wonderful! Made brown rice and fresh green beans with it and it turned out to be a very delicious and healthy meal. I can't wait to have it again!

Tomato-Curry Lentil Stew

This soup was pretty good although it seemed like it was missing something. I added a little dried basil and sprinkled grated parmesean cheese on top which helped. I think it would be better made with chicken or vegetable stock instead of water.

Pork Chop and Potato Casserole

This recipe is so easy and delicious! I only has to make a few changes: I seasoned the potatoes with garlic powder, salt and pepper, added a few cloves of garlic to the soup mixture, and as others suggested, covered the dish for the first 30 minutes. It turned out wonderful. Will definately make this again!

Anthony's Chicken

My husband really loves this recipe. We had it at a potluck and he would not stop talking about it, so I made it. I did make a few minor changes though to make it more nutritional. I fried the chicken in half the oil and ommitted the butter, used only 12 oz of reduced fat bacon and used reduced fat cheese. It still tasted great. I also only used 2 tablespoons of the spicy mustard.

Spiced Pumpkin Seeds

This is the best recipe I have ever tried for pumpkin seeds! My husband and I both loved it. I only made a few minor changes. I added 1 tablespoon Worcestershire sauce and baked them at 300 degrees for 45 minutes, stirring about every 13 minutes or so. They turned out perfectly!

Salisbury Steak
