Sarah's Easy Shredded Chicken Taco Filling

This easy recipe became the base for an instant family favourite. I use three chicken breasts (I don't know if they would qualify as small), a 15oz can of tomato sauce (we like our meat with suace), 1 heaping tsp of cumin and 1 tsp of chili powder (really I used an Ethiopian red pepper mix). I also added sea salt to taste. Very delicious!

Red Lentil Curry

Delicious lentil dish with no modifications needed. This has become a weekly meal in our family. Our 1-year old loves it as well (although I serve it at just a little warmer than room temperature for our kids to take off the edge of the spicy heat). Also, I do like it mushy, so I am rather liberal with the amount of water. Yummy dish!

Eileen's Spicy Gingerbread Men

Great recipe. Easy for young children to help with. Double up (or more) on all the spices - except cloves. Chill for 2 hours to reduce stickiness, and roll between sheets of wax paper. It was not super spicy (even though I doubled the spices), but great for most kids' palettes. I am not a frequent baker, yet I found this easy to make, and got rave reviews.

Roasted Beets and Sauteed Beet Greens

Excellent recipe. This is one that we have used again and again at our house. I chop up the beets and store them in the fridge, and use them on top of salads or just as a healthy side dish over the course of a week.

Carrot Cupcakes with White Chocolate Cream Cheese Icing

These cupcakes were perfect. It was my first time baking, and I made them for my 2-year-old's birthday party and all the adults and the kids loved them - people couldn't stop raving. I made 3 separate batches instead of tripling the recipe - it was simple enough once I prepped the ingredients. I increased the cinnamon (2.5 tsp) & nutmeg (1 full tsp), and so they were nice & spicy, but not overpowering. They were definitely ready under 20 mins (probably more like 17 mins). I made them the night before, stored them in an airtight container at room temp, and frosted them the morning of the party. I did not use the icing here, but one which went perfectly and was enough to cover over 30 cakes. Leave some unfrosted for breakfast or morning tea! You can't go wrong with this recipe.
