Cinnamon Hazelnut Biscotti

This was my first time making biscotti and they came out great!! I did follow other reviewers suggestions as follows: 2/3 cup butter, 2 t cinnamon, 3/4 cup toasted pecans, 1 t vanilla extract and 1/2 t almond extract. The only thing I changed on the baking time was to turn the oven off at the end and leave the cookies in for about 5 minutes. They came out with the perfect amount of crunch. Also drizzling melted chocolate over cookies is a must. I will definitely make these again!!

Guacamole

Excellent guacamole...very fresh and great taste. I used red onion and grape tomatoes because that's what I had on hand. It will be yummy with the taco salad that I'm serving for dinner tonight.

Spaghetti Squash I

This was very good and healthy too. I microwaved the squash which was much less time consuming. Pierce the squash with a sharp knife about five times, microwave on a paper towel on high for 10-12 minutes turning three times. Let it sit for 5 minutes, then cut lengthwise and remove the seeds. I used canned tomatoes along with the other ingredients, added a little salt and pepper. It was excellent...will definitely make this again.

Pecan Pie Bars I

I made these for Father's Day, and they were a big hit. I would highly recommend lining the pan with parchment paper and spraying it with non-stick spray. The clean up was very easy, but otherwise would have been a lot more work. I also used 1/2 white sugar and 1/2 brown sugar. I baked 25 minutes, but should have checked at 20 because the edges got a little over cooked. They stay very moist for days. We have enjoyed heating them up in the microwave and putting vanilla ice cream on top. Very good recipe!

Grilled Flat Iron Steak with Blue Cheese-Chive Butter

I willl try this again, but with a diifferent cut of meat, probably filet or strip steak. The flat iron steak was too tough and chewy. The blue cheese- chive butter was excellent and saved the dish. I did cut the butter by 1 T and added a little more blue cheese. Also added garlic powder.

Grilled Pork Tenderloin with Balsamic Vinegar

This was very good. The pork was moist and flavorful. I used thyme and grilled on an outdoor grill. I simmered the remaining marinade, added 1 T dijon mustard and 1 T brown sugar and reduced until thickened. Served over the pork it added lots of good flavor! Will make this again.

Seven Layer Taco Dip

Made this as an appetizer for the Superbowl. The overall flavor was good, could have been a little spicier. I added a layer of homemade guacamole and then black beans on top of the sour cream/cream cheese layer and omitted the lettuce. My biggest disappointment was how watery it was. I had to soak up excess liquid with a paper towel after we started to eat it. I would suggest omitting the salsa or using a hearty variety (or drain liquid). Will try again without salsa.

Chocolate Truffle Cookies

These cookies are a chocolate lovers dream and perfect for Valentine's Day. I used the ingredients exactly as written. A small ice cream scoop is perfect for making the balls as the dough is rather sticky. I flattened them just slightly and baked for 9 minutes. Perfection...these are definitely a keeper.

Turkey and Quinoa Meatloaf

Great meatloaf and healthy too. It is very moist and the quinoa gives it a nice texture. I have made it twice and both times my husband and I loved it. I did reduce the 1 T of hot pepper sauce to about 1/2 teaspoon of Chili Garlic Sauce and a few dashes of Tabasco. You can find the chili sauce in the Asian section of the store. Also, used just 1 T of brown sugar/splenda blend since we do a low sugar diet. The topping was still sweet and very tasty! Excellent recipe!!

Slow Cooker Spicy Black-Eyed Peas

Awesome recipe for black-eyed peas! I used 5 cups of chicken stock instead of water and boullion cube. Ham steak instead of bacon and increased garlic to 4 cloves. Also, added one bunch of collard greens 1.5 hours before end of cooking time. Cooked on high for 4 hours, then reduced to low for 2 hours. Served with sour cream, green onions and cilantro...best black-eyed peas ever!

Roasted Tomatoes with Garlic

Very good and easy, great compliment to so many entrees. I used grape seed oil as suggested by another reviewer and had no smoking up of the oven. Also garnished with toasted pine nuts and basil because I had them on hand. I will definitely make this again!

Great Green Salad

Excellent combination of flavors in this salad and dressing! My family loved it. I used champagne vinegar and toasted slivered almonds because that is what I had in the pantry. Also used only 2 tablespoons of olive oil, omitted the sugar and increased lemon juice to 1 tablespoon. Used romaine lettuce. Highly recommend this delicious salad to serve to your family or company. It was that good!!
