I love this recipe for a basic muffin, but if you are looking to add some 'healthy' stuff to it, here's what i do... I don't ever bake with vegetable oil and instead use real butter, you have to melt the butter though. Your dough will have a different consistency, but it won't affect the final muffin, except make it way tastier. I also add some flax and use whole wheat pastry flour. If you want to switch your baked goods to whole wheat but don't want the graininess of whole wheat, the whole wheat pastry flour is the way to go!!! I also use rapadura sugar or brown sugar for the top. I think it has a richer flavor for the strusel. I've also loaded the things up with strusel and never had my muffins sink. If you wanna get super crazy with the top, cut the flour and add oatmeal.
