I am a high school teacher in Baltimore City who wishes that he had more time and a better kitchen for cooking.

Greek chicken, lasagna, soups, chili, and other "homey" foods.
My favorite family cooking traditions
Greek chicken and Spinach and rice... my traditional birthday meal for as long as I have been requesting one. Oh, and in my family, you never, NEVER, cut your spaghetti at the table!
My cooking triumphs
Making a tuna casserole (from scratch) that was actually the best I have ever tasted. Also, just being able to regularly impress people who have no idea that I can cook (mostly my family.)
My cooking tragedies
No real tragedies to speak of yet,... but there have been plenty of mediocre dishes that I thought should have been great.

Spicy Chicken Thai Soup
This was a wonderful recipe! I followed Chef John's steps and recommendations, and this turned out so delicious! We did up the amount of red curry paste, as we like things spicy, but that was the only difference. I had never made Thai food before, but this was so simple and satisfying that I may have found a new avenue to explore. We have been on a real soup kick, and this will be added to the regular rotation. Awesome! Thank you, Chef John, for yet another easy and delicious recipe! Five stars!

Feta Cheese Turkey Burgers
I made these this past Saturday, and then saw almost the exact recipe on the website today! We used whole wheat buns, but we even talked about how next time we will try to use a nice, thick pita bread! Some slight changes: I added some bread crumbs and an egg to help the patties hold together, and we added crushed red pepper and garlic powder to the mix as well. We topped ours off with fresh baby spinach, red onion, tomatoes, and cucumbers, and my girlfriend made a dilicious sauce out of plain greek yogurt, lemon juice, and fresh dill. Served with grilled zucchini... VERY TASTY! The only thing was that I found it took much longer on the grill than 10-12 minutes... more like 20-25 over medium heat. Maybe I made my patties much thicker, but be sure to check the middle of the thickest patty before serving... turkey should not be undercooked.

Spinach-And-Berries Salad With Non-Fat Curry Dressing
We really loved this salad. We ended up adding a little bit more honey because I think that we originally added a bit too much vinegar and/or curry powder and it was initially too tangy. In addition, we added feta to the mix, which turned out to be a nice addition. We were surprised at how well the spicy/tangy dressing complimented the sweet fruits. We swore that the dressing made the strawberries fizz as we chewed, sort of like pop-rocks (in a good way!) All in all, a very nice recipe. Thanks for posting!
