Milk Chocolate Florentine Cookies

I loooove these cookies! One of my favorites from the Italian bakery :) Couple of suggestions to make them perfect: Use parchment paper. These are pretty sticky. I was using my fancy pants thicker aluminum cookie sheets and they weren't cooking/spreading fast enough. Switched to my flimsy cheap nonstick cookie sheet (still with parchment) and viola! Perfect browning on the edge and reduced cook time. Use a little more than the recommended teaspoon. In the bakeries these aren't so "holey" and are a satisfyingly sweet and sticky cookie. Lastly, give them a little smoosh before baking since they don't spread enough on their own to make a flat thin cookie. Don't flatten them completely, but don't leave them as round balls either. Thanks for the recipe! This NY'er has Italian cookie fever in MN :)

Pollo (Chicken) Fricassee from Puerto Rico

This was soooooooo good! I used a little bit more chicken (it was a pack of leg quarters but then I skinned it and removed all the ick so I'd say maybe about 2 and a half pounds were used) and there was enough sofrito without adding more liquid to cover the potatoes and chicken. Very authentic taste. Can't wait to make it again just to smell the fresh sofrito in my blender :o)

Trinidad Stewed Chicken

This was fantastic!! Every bit of chicken and the sauce was gobbled up! I did have a bit more chopped onion (like half of a small one) but otherwise had everything the same. One more thing should be added to the instructions though, when the chicken is ready, uncover the pot, put the heat up to high and let the sauce reduce and thicken for a few minutes. Thanks for a fantastic recipe!

Moroccan-Style Stewed Chicken

More of a soup than a stew. I added a few more pieces of chicken thighs, and towards the end I put in a can of drained chickpeas and some frozen green peas for some more body. Next time I'm putting in the raisins toward the end too so that I don't have grapes in my soup, and leaving out some of the honey.

Agedashi-esque Tofu

Pretty good! I never had tofu before and this was a good first try :) I did squeeze out a lot of the liquid first though and I think it made a big difference. Instead of drizzling the hoisin which is thick and not easy to drizzle, I put the tofu in a large bowl and stirred it around with the hoisin. I served it with rice with veggies mixed in with a drizzle of sesame oil on top.

Cranberry Almond Biscotti

These are the first biscotti I have ever made and they were fantastic! A little tough to mix together and a very sticky dough but it turned out great! I had used a good amount of flour on the board to roll it up and used parchment paper on the cookie sheets. Thank you for making me unafraid of biscotti!!

Rainbow Cookies

Very authentic flavor :) I miss Italian cookies from the bakeries in NY. Brought a taste of home to my new home in MN. Go easy on the raspberry jam and be sure to spread your batter all the way to the ends of your pan, it won't spread on its own.

Summer Stuffed Peppers

This was really good. I only had green peppers, and I think red and yellow peppers would have been much better. The filling was really tasty. I forgot to drain the beef which made the dish pretty greasy, but next time I still wouldn't drain it thoroughly and leave behind some juices. I also seasoned the meat just a little with some garlic powder, salt and pepper before adding the rest of the stuff.

Chocolate Crackle Cookies

The batter was almost like a mousse, and it didn't have a deep chocolate taste, so instead of adding flour, I added about a quarter cup of unsweetened cocoa powder and chilled the batter till it firmed up just a little. If you're going to roll it in confectioner's sugar, put a thick layer to get that bright white spotted look, otherwise it just cooks into the cookie. Once I tasted the cooked cookie, I remember a packaged cookie that's very similar in taste, but had that granulated sugar with the slightly bigger chrystals on it. That's the route I'm going next time for these super tasty cookies!

Cinnamon Hazelnut Biscotti

Really good! Needed a lot of bench flour since the dough was really mushy and sticky. I always cut my biscotti hot to avoid breaking them. These aren't very sweet which is fantastic in my book!

'King Of Rock' Frozen Pudding Pops

I really loved the subtle peanut butter taste and the texture of the popsicle. I didn't like the artificial banana taste of the pudding mix, but that's not the fault of this recipe. I may however make a reese's inspired pop and use the chocolate fudge pudding mix. Thanks!!

This was surprisingly good! Didn't think the sweet potatoes would go well with the black beans but it did! Might taste good with green bell pepper also (red peppers can get kinda pricey).

Tarragon Mushroom Chicken

Very good! I added 2 small cans of mushrooms and it was perfect! I think it would go well with artichokes too... Thickened the liquid with cornstarch then put a piece of chicken over some rigatoni then poured the sauce on top. Thanks! Will definitely make this again maybe with a little less sherry.

Apple Fritters I

I used 2 Braeburns chopped up instead of 4 and dropped them into the oil with a teaspoon and WOW!! Super fantastic crispy fluffy sweet fritters that were soooooooooo good!! I think if I had added the other 2 apples it would have been overkill on the apples. This way it was almost donut like in texture.

Creamy Chipotle Chicken

Not happy with this at all. Too much sodium left us very thirsty, and I had used reduced sodium broth. The cream cheese was not integrated well into the sauce, I would add it in the last hour already softened. A little more flavor was needed somewhere, just can't put my finger on it. Tried adding fresh cilantro and still wasn't too good. Really hoped this was going to turn out good since I love the smokey flavor of chipotles.
