BBQ Pulled Pork Sandwiches

My family loved this recipe! I omitted the cayenne because it would be too spicy for the kids - still turned out great! We especially liked the cole slaw, which I made in advance so I basically didn't have to do any prep when it came to dinner time.

Easy Tuna Casserole

I made this as it is written and it was a bit bland. I added a little salt and it was much better. My husband loved it! One note if you are trying to fill the whole 9x13 baking pan: double the recipe.

Chocolate Pretzels

These are super easy and cute. I made them for my 3 year old's party and the parents raved about them. Many of them asked me how I made them. They are super fast to make too. One tip, you'll be tempted to make a huge batch of them at once, but do them in batches of 20-24 at a time because the chocolate will cool and start to crack when you push the M&M down. If you want them looking as perfect as possible, do them in small batches so you can take your time and make them really nice.

Slow-Cooker Pepper Steak

This is a really good recipe. I made it as-is from the original recipe except I added the bell peppers 90 minutes before serving and it was still a little too soft for my tastes. The beef was a tad salty so I will cut down the soy sauce or maybe dissolve only half of the bouillon cube. Overall a keeper!

Peanut Butter-Pretzel Bonbons

Pesto Primavera Tortellini with Chicken

This was my first tortellini dish I ever made and (embarrassing as it is to write) it was so insanely good! I couldn't wait to eat it for lunch then dinner, then lunch then dinner again! I didn't have the tomatoes or bell pepper, but it was still delish - I feel that this recipe would be great even if you had to improvise or add in your favorite veggies. Tasted even better when made ahead of time!

Quick and Easy Chicken Noodle Soup

I made this yesterday for my sick daughter and it turned out wonderfully delicious! I used the breast meat from a rotisserie chicken and also added some fresh ginger slices. Do make sure you use all low sodium broth or else it will be a very sodium-filled soup! I'm going to make more soup using the rest of the rotisserie chicken and maybe freeze that batch for a quick last-minute dinner.

Japanese Broiled Mackerel

Mom's Zucchini Bread

Delicious! This was the first time I made zucchini bread and it turned out so good! It was moist and so yummy. Only thing I did differently was subsituted half the oil with unsweetened apple sauce.
