Dilly Egg Salad

I am a big fan of the egg salad with DILL relish not sweet relish. I had been looking for a good recipe for egg salad and this is it! I also recommend looking @ the recipe for DIVINE HARD-BOILED EGGS. I never realized there was a proper way to boil eggs-they really do turn out better than the way I used to cook them.

New Wife Tuna Salad

Made this exactly as the recipe said and all I could taste was tuna fish. The next day I added more dill relish, onions, honey mustard and celery and didn't tell my family. After lunch I inquired if it tasted any different than the day before. Everyone said no. Just tuna fish. I was very disappointed in this dish. It seemed like a waste of ingredients for a very bland one note flavor. It would probably taste better without the tuna just the eggs and other favors. Taking this one out of my receptive box

Pumpkin Pancakes

I've been looking for a recipe like this ever since I lost the one I had been using. The only thing I did differently is I used pumpkin pie spice instead of ginger. Everything else I did exactly as the recipe is printed. I found when I cooked these after I flipped them I had to press down on them to flatten them out or else they didn't cook in the middle. They were so thick. As long as I did that they cooked to perfection. I use my food processor to mix everything and poured the batter into a pitcher for pouring onto the skillet. I had a yield of 15 medium size pancakes. My family has no interest in eating plain pancakes after eating pumpkin pancakes. I would love to try this for waffles.

Chicken Pot Pie IX

We made this in one large deep casserole dish instead of two pie pans. Used the never fail pie crust II recipie from this site and it was fantastic. We had to double the gravy because there just wasn't enough to fill the dish and I added 2 baked potatoes (cubed) also didn't have celery seeds so substituted celery salt-worked great! A very rich dish but very very tasty.

Sweet and Spicy Soup with Black-Eyed Peas and Sweet Potato

This recipe is fantastic. I used all the spices listed just in different amounts. I bumped the cumin, cayenne and coriander seeds up to 1/4 teaspoon. I did use freshly crushed coriander seeds for maximum flavor. I used just 1/8 teaspoon for the thyme, basil, oregano and rosemary. Used a pinch of mustard powder and stuck with only fresh onion and garlic instead of water I upped the broth. 2 cans of Swansons chicken broth 2 cans of black eyed peas and I can of diced tomatoes. I cooked 2 sweet potatoes separate then diced them before adding them to the stew. I cooked the onion, garlic, celery and red pepper together to begin. I waited to add the spices until after I added the liquid. I did grill some chicken breasts and diced those up before adding to the stew for a more complete meal. Finally I garnished with fresh cilantro rather than parsley for a brighter flavor. Almost forgot I went ahead and used 1 full teaspoon cinnamon with the tablespoon brown sugar. I didn't think 1/2 tsp. gave it enough flavor. I almost didn't use all the spices but figured that was why I picked this recipe. I wanted to try something really different from my usual fare. This was truly an exotic and wonderful tasting dinner. We will be fixing this again often!

Mom's Italian Beef Barley Soup

This is a nice change from our usual standard soups. Nice and hearty just have to watch out for the barley sticking to the bottom of the pot. Very tastey

I have been looking for a good minestrone recipe and boy was this it!!! This was really easy and very hearty even though I am married to a major carnivore he loved it. We might try it w/Italian sausage on the side next time-yum!

Never Fail Pie Crust II

My husband made this yesterday while I was making the chicken pot pie IX recipie and it turned out wonderfully! You really don't have to roll it out just shape it to whatever pan you are using-we ended up using a deep casserole dish. Top marks!

Mock Lobster

I don't know about it tasting like lobster but this is the best chicken marinade I've used. I went ahead and marinaded the breasts overnight and when my husband grilled them they were still so juicy I had to check to make sure they were fully cooked (they were). They just melted in your mouth.

Parmesan Focaccia Bread

I would have given this 5 stars but using the amount of olive oil given in the recipe about smoked us out of the house. When the bread rises a lot of the 1/3 cup of olive oil ends up in the bottom of your oven and smokes.

Funnel Cakes

The ONLY thing I did differently to the recipe was to use 1/2 cinnamon and 1/2 pumpkin pie spice everything else I followed to the letter. I thought these tasted EXACTLY like funnel cakes from the fair. To the people that complained they weren't sweet enough - what makes funnel cakes sweet is the topping. That's what the powdered sugar is for (or fruit etc). It also makes a big difference what kind of oil you fry them in and the temperature. I did try (on one cake) using barely any oil in a pan (like one reviewer said) and it came out flat almost like a tortilla. Let's face it - these aren't health food so if you want it authentic you're gonna have to deep fry it in Crisco. I did hear Crisco has come out with a non trans fat oil. I'll have to try it. I think this recipe is 100%. I wouldn't add sugar to the batter at all. I also used a measuring cup to drizzle the batter into the pan. Once you get the hang of it these are pretty easy. They got rave reviews at my house, we just won't be eating them too often.

Corn Casserole I

Wow! I was looking for a new side dish to serve with Xmas dinner. We were fixing something a little different than the typical turkey dinner (seasoned boneless pork roast). Followed the corn casserole recipe exactly and it was excellent. It was similar to dressing but with a twist. I used Jiffy box cornbread mix ( I don't know if that added anything extra in the way of flavor but thought it worth mentioning). Everyone just raved about it and cooked as instructed it was very moist with the cheese browned on top. A few reviews mentioned worrying about it being too dry with the full amount of corn bread mix. I didn't find that to be a problem. Next time I think I will switch out jalapeños instead of the green chillis. We decided we could go for that extra tangy kick. I highly recommend this recipe. It was very fast and easy to make.

Fruity Curry Chicken Salad

Incredibly flavorful! Used walnuts because I didn't have pecans. Everything else just as the recipe called for. Turned out wonderfully!!! Fixed it really early in the morning so it was refrigerated for @ least 4 hours before eating. I kept the nuts separate to sprinkle on top of the salad so they would stay crisp. Also my parents have trouble eating nuts (false teeth) that way they could skip the nuts for easier eating. Couldn't find a golden delicious apple so I used a pink lady. This salad was amazing and we will most definitely put it in regular rotation in our house hold. It yielded 8 sandwiches on hard rolls. Highly recommend this salad!

Too Much Strawberry Cake

Substituted applesauce for the oil as suggested and used low fat sour cream too. I found this to be an excellent cake that you can throw together in the time it takes to preheat the oven. Not made from scratch but customized enough to make it stand out. Had a nice crispy exterior and moist interior. The cake is not very sweet but the frosting gives it that extra sweet note. Will definitely make this again. Also will try the chocolate and lemon version.

This is hands down the best, most moist chocolate cake I have ever tasted. We've used it for birthday cakes or any occasion. The cherries are heavenly. Not too sweet.
