Chicken Pot Pie IX

We made this in one large deep casserole dish instead of two pie pans. Used the never fail pie crust II recipie from this site and it was fantastic. We had to double the gravy because there just wasn't enough to fill the dish and I added 2 baked potatoes (cubed) also didn't have celery seeds so substituted celery salt-worked great! A very rich dish but very very tasty.

Mock Lobster

I don't know about it tasting like lobster but this is the best chicken marinade I've used. I went ahead and marinaded the breasts overnight and when my husband grilled them they were still so juicy I had to check to make sure they were fully cooked (they were). They just melted in your mouth.

Parmesan Focaccia Bread

I would have given this 5 stars but using the amount of olive oil given in the recipe about smoked us out of the house. When the bread rises a lot of the 1/3 cup of olive oil ends up in the bottom of your oven and smokes.

Easy Black Bean Soup

This is truly EASY and FAST to make. The only changes I made were adding 1 extra can each of the refried and whole black beans-we just like more beans in our soup. Also adding that much lemon juice is not for the faint of heart. I cut the amount in half. As for the sour cream, I just mixed it into the soup itself If you're looking for something to make for dinner that's really good but quick and easy this is it.

Dilly Egg Salad

I am a big fan of the egg salad with DILL relish not sweet relish. I had been looking for a good recipe for egg salad and this is it! I also recommend looking @ the recipe for DIVINE HARD-BOILED EGGS. I never realized there was a proper way to boil eggs-they really do turn out better than the way I used to cook them.

These are quite frankly the BEST chicken enchiladas I've ever eaten. I swear I'm going to figure out how to morph this recipe into a new version of tortilla soup. God these are good-thanks Angela!

Baked Potato Soup

We LOVE this soup! when I make it I always double it because as is there just isn't enough. For 4 adults I use 6 med size potatoes also for a double batch I used the combination of 1 cup half and half and 2/3 cup lite sour cream. Also garnish w/chives rather than parsley. YUM!
