Cream Soup Base

This is a great base for any number of cream soups. Just add left over veggies, canned veggies, etc. You are only limited by your imagination. I sauteed' onion, garlic and celery and added to the basic soup. Microwaved several potatoes and mixed those in. I added more milk for consistency, but it was wonderful.

Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes

This is definitely worth the effort it takes to make it!!! The flavors of the bacon, feta and chicken blend so wonderfully. The chicken breasts I used were quite large so I cut them in half and it still worked well. Love, love this and have sent it to several relatives for them to enjoy also!

Oregon Salmon Patties

Love the taste but had to make major modifications to make them hold shape. I added all the cracker crumbs to the mixture and still had to add 1/4 cup of flour to make them into patties. Didn't coat with crumbs, but they were good anyway.

Clark's Quiche

The sour cream was a new addition to quiche for me. But, it is now a necessity. You are only limited by your imagination when it comes to adding meat and vegetables. I make meatless for some family members, only bacon and cheese for some or throw in cooked roast beef, turkey, chicken or whatever I have on hand. Clean out your refrigerator and toss in dabs of leftover vegetables for a wonderful surprise dish! My family loves quiche and a salad and the leftovers are just as good tomorrow! I'm making 8 for a family reunion next weekend. They are great cold, too.

Easy Bacon and Cheese Quiche

I love the idea of the bacon bits. I always use cooked bacon in my quiche, but it gets 'soggy'. I throw in some fresh spinach or any other veggies I have on hand. Nothing is beter than a bacon quiche and a salad! Thanks for the idea.

Easy Garlic Chicken

This is the easiest and one of the tastiest chicken breast recipes I have used. I added some olive oil to the butter, cut the chicken breasts into thirds and double dipped the pieces in the bread crumbs since my family loves breading. I baked it only the time suggested and it was so juicy and tender you could cut it with a fork. Thank you for this too easy to be true recipe.

White Sauce

This basic sauce can be the start of cream soup also. Double or triple the recipe and add milk to get the desired soup consistency. Stir in any meat or vegetable and simmer until vegetables are tender. Season with salt, pepper, crushed red pepper, basil or whatever you like. It's cheap, tasty and easy to make. And you can be as creative as you like.
