Helpful tips: don't mix too much at the beginning. In fact, I said to knead, but don't! I just stir it up with my mixing fork (Foley fork-LOVE!) and it's still really moist--almost too moist. After it's done rising 2 or so hours, sprinkle flour on top of the dough and punch down, cut in half and knead dough on flour coated countertop. After minimal kneading, let the dough rest for 15 mins, covered with a dishtowel before rolling it out for pizza. Dough is like a cat. The less you care about it, the better it treats you. :)
