Flatlander Chili

I almost didn't review because, what's one more 5 star rating, right? BUT! It really is as good as they say. Make it as directed. Tweak to your heart's content. It will turn out splendid, no matter what you do. My family loves this one, from the 34 year old to the 5 year old. Only pizza gets more raves. ;)

After-Thanksgiving Turkey Soup

We always make Turkey Soup after thanksgiving, but it's really...regular. This is still traditional tasting, but has so much fullness (I think it's the butter). We added broccoli and spinach for more iron. It's a new family tradition!

Big Al's K.C. Bar-B-Q Sauce

This is a great sauce--the first I've tried that was a little more complex in its flavorings. Our favorite KC place is Oklahoma Joes. This sauce is close to theirs, but not as hot, so I added Red Pepper, plenty of black pepper, more celery seed and a bit more cayenne. Now we're talkin!

Pizza Night!

Helpful tips: don't mix too much at the beginning. In fact, I said to knead, but don't! I just stir it up with my mixing fork (Foley fork-LOVE!) and it's still really moist--almost too moist. After it's done rising 2 or so hours, sprinkle flour on top of the dough and punch down, cut in half and knead dough on flour coated countertop. After minimal kneading, let the dough rest for 15 mins, covered with a dishtowel before rolling it out for pizza. Dough is like a cat. The less you care about it, the better it treats you. :)

Grandma Johnson's Scones

I get many raves when I make these scones. I don't normally keep sour cream, so this is not a spur of the moment scone recipe (I have an authentic Scottish one for that). It IS my favorite!

Brown Sugar Meatloaf

It's super-duper if you like a sweeter, ketchup-y meatloaf. I used the opportunity to add some more veggies, worcheshire, wheat germ, and some other sneaky mom things to make it healthy. I took others' advice and made some in cupcake tins, then froze for my husband to take to work, and made and froze a large one for dinner another night. It's in the oven right now.

Megan's Granola

Megan's Granola is eaten everyday at our house. It's cheaper and tastier than Quaker Natural Granola, and it's also healthier! I also use Coconut oil instead, and add whatever else we have on hand. Also, I use proportionately more brown sugar and omit either the honey or maple syrup depending on my mood.

Black Beans and Rice

This is a family favorite: filling, but not fatty. I do soak my beans, but add a little bacon drippings, onions and salt to them. I rinse my rice before I cook it to make it sticky, too. Serve with lettuce, tomatoes/salsa, corn, cheese and plain yogurt on top for that extra little something which makes it a complete and completely tasty meal!
