Delicious Ham and Potato Soup

This was my first time making Potato Soup and it was absolutely delicious! The ONLY thing different that I did was used bacon instead of ham (1/2lb of it) and cut out a cup of the milk. I doubled the recipe since I was cooking for more people than usual. I cooked the bacon and then poured bacon and the grease from it in the pot with the potatoes, water, celery and onion. I then followed the rest of the directions and just excluded a cup of milk (since I doubled the recipe 3 cups instead of 4). That made the soup the perfect consistency for us, not to thick and not to thin. I almost didn't add the bacon grease until my husband saw me contemplating it before I added it to the pot.."Babe, you gotta add that bacon grease!"..my thoughts exactly and I'm so glad that I did. I know all that additional flavor was due to that. It was excellent! Thanks for sharing:)

Cream Cheese Frosting II

Ooooooweeeeee! This was the perfect frosting to top my pumpkin bread! It was not to sweet (my hubby doesn't like really sweet frosting). I didn't change a single thing except the serving size. I did it for 10 serving, rather than 24. Made just enough for my bread. I will definitely be saving this simple and quick recipe...thanks for sharing Jani!

Chicken Scampi II

This was really good! I ended up using very close to a cup of butter. I used fresh parsley, basil and oregano because two out of the three I didn't have on hand. I followed the suggestion of using white wine as well, 1/4 cup. I used quite a bit more lemon juice than what the recipe calls for. I didn't really measure it, but if I could guess I would say between 3 to 4 tablespoons. I also added a green bell pepper and would have added a red one, and some red onion if I had them. Overall I would give this recipe a 5 with the modifications I did:) My family was in heaven and I thought I didn't do to bad myself!

Bill's Sausage Gravy

Ok, I know everybody thinks that their sausage gravy is all that, but this one really, really was!!!! I have NEVER been a fan of sausage gravy, but I made this for my hubby and his brother a couple of weeks ago and oh my goodness I was just about licking the pan myself!!! I'm making it tonight for dinner..lol. This is great just the way it is. I made absolutely no changes and I'm always changing stuff up a bit. So fattening, but soooo delicious!!

Chocolate Chip Banana Bread II

This is the absolute best Choco Chip Banana bread I have ever had!!! This is my 2nd time making it at the request of my family. It is so moist and so full of flavor! The only things that I did differently (and you really don't need to do anything different for this recipe to be perfection) were I added another cup of chocolate chips (at the request of my hubby)I followed everyone's suggestion about using butter instead of shortening(shortening can be so messy and I don't cook with it so it wasn't on hand anyway), no walnuts cause we don't like em' and I added 1 tsp of pure vanilla extract. YUM!!! I baked it for the full 75 min last time and it was pretty dark so I set it for 50 and will just check it every 5 min or so after that. You have to try this! It's very rare that a recipe has a full 5 stars on this website. That definitely says something!!

Sausage Casserole

Wow...this dish was absolutely amazing!!! The only things that I did differently were omitting the onion all together (my hubby is not a fan of them), beat my eggs with about 1/4 cup of milk before adding the other ingredients and stirring all together and I added a 1/2 tsp of Ground mustard. I took this to my MOPS meeting this morning and the ladies raved over it! Delish:) Thanks for sharing!!

Mexican Rice I

Wow this rice was amazing! The best mexican rice I have ever had in fact. I actually did something a little different. Instead of adding the chili powder and cumin I used 1 tsp out of a Taco Bell taco seasoning pkt and 1 1/2 cups chicken broth instead of just water....Wowza!!! This was awesome! Gotta try it that way and see what ya think. We will definitely be having this recipe again. Thanks for sharing!

Creamy Chicken and Wild Rice Soup

This recipe was absolutely amazing. I made a few minor changes to kick up the flavor a bit. Instead if the 2 cups water 4 cups chicken broth. I did 7 cups water with 4 tsp of chicken bouillon granules. I added 1/2 cup onion, 1/2 celery, a clove of garlic and cut up about 12 baby carrots being I didn't have any regular sized carrots. I then took a tsp of butter and added my veggies into that sauteeing them for about 10 minutes or until onions were translucent. I added my veggies into the broth and chicken mixture along with 1/2 tsp of crushed rosemary, 1/2 tsp ground thyme and a sprinking of white pepper. The last addition to the recipe I made was a 1/2 cup white cooking wine...YUM!! This dish was amazing and very, very flavorful. I will definitely be making this one again soon.
