I am a complete "late bloomer" so to speak! I just recently began to really get into cooking at 31 yrs of age! After 3 children and being married for almost 6 yrs I am on the late show, but I say "Hey...better late than never!" Hahaha:) I'm happily married to my soulmate who will eat anything I cook pretty much. If he doesn't like something he usually puts a lot of Tapatio on it! My kiddos are of course less gracious about my cooking, but hey..ya gotta love em' for that. I have 3 beautiful boys'ages 4 months to 8. Life is good and I am blessed!
My favorite things to cook
I've come to find that casseroles are my thing. They are quick and easy and with my busy schedule that is just what I'm looking for. I love breakfast casseroles the most. They are good to make and then just pop in the micro when you want a delish breakfast. My hubby loves them!
My favorite family cooking traditions
Hmmmmm, haven't made to many of those yet. Gonna have to work on this one..lol.
My cooking triumphs
Cooking a whole Thanksgiving dinner by myself for the first time in 2008 for 15 people and doing an awesome job! It was so rewarding to have everybody constantly giving me compliments on the food. It did me good and gave me that confident boost I needed to really get into cooking.
My cooking tragedies
LOL...to many to count! One that is quite memorable was that Thanksgiving where I cooked for the first time by myself. Everything was awesome except for the pre-cooked ham that I cooked again for 4 hours......yea, that turned out a little rough, but it was a good conversation piece! We still talk about that one!

Delicious Ham and Potato Soup
This was my first time making Potato Soup and it was absolutely delicious! The ONLY thing different that I did was used bacon instead of ham (1/2lb of it) and cut out a cup of the milk. I doubled the recipe since I was cooking for more people than usual. I cooked the bacon and then poured bacon and the grease from it in the pot with the potatoes, water, celery and onion. I then followed the rest of the directions and just excluded a cup of milk (since I doubled the recipe 3 cups instead of 4). That made the soup the perfect consistency for us, not to thick and not to thin. I almost didn't add the bacon grease until my husband saw me contemplating it before I added it to the pot.."Babe, you gotta add that bacon grease!"..my thoughts exactly and I'm so glad that I did. I know all that additional flavor was due to that. It was excellent! Thanks for sharing:)

Cream Cheese Frosting II
Ooooooweeeeee! This was the perfect frosting to top my pumpkin bread! It was not to sweet (my hubby doesn't like really sweet frosting). I didn't change a single thing except the serving size. I did it for 10 serving, rather than 24. Made just enough for my bread. I will definitely be saving this simple and quick recipe...thanks for sharing Jani!

Chicken Scampi II
This was really good! I ended up using very close to a cup of butter. I used fresh parsley, basil and oregano because two out of the three I didn't have on hand. I followed the suggestion of using white wine as well, 1/4 cup. I used quite a bit more lemon juice than what the recipe calls for. I didn't really measure it, but if I could guess I would say between 3 to 4 tablespoons. I also added a green bell pepper and would have added a red one, and some red onion if I had them. Overall I would give this recipe a 5 with the modifications I did:) My family was in heaven and I thought I didn't do to bad myself!
