Eggplant Parmesan II

Yum Yum! So good and super easy, since I hate frying! How long you need to bake the eggplant slices really depends on how thick you slice them - I cut mine about a half inch thick and they needed 10 minutes a side at 375 to be nicely browned.

Easy Decadent Truffles

This is a great easy base truffle recipe - it works great with almost any variation of liquor or flavoring and I found that they are very easy to roll as long as they are not too cold and not too close to room temperature. I checked with Pillsbury and they said that they do not have to be refrigerated after making, but I think they taste better chilled. I had a massive assembly line and made 3 whole batches in 3 different flavors/ toppings to give out as Christmas presents, and it saved me TONS of money, and they looked great! (I did one with Bailey's topped with powdered sugar and a Bailey's glaze drizzle (3T per), one with Orange schnapps, powdered sugar and an orange tinted schnapps glaze, and the last with mint schnapps rolled in green sugar.

Apple and Spice Pork Roast

Perfect! I added some liquid smoke as I was putting on the rub to help it stick, but I am not sure if it really altered the flavor. I agree with the other posters that making extra sauce for topping prior to serving is a must - YUMMY!

Butternut Squash Casserole

Oh my sooooo sweet - even if I were serving it as a dessert! I even skipped the vanilla wafers. The texture was perfect, but no one could even eat more than two bites, even the kids. Next time I will cut the sugar in half and use double the squash, and try more of a strusel topping - maybe with nuts

Amazing Chicken

Can't get any easier than this - chicken was yummy and moist. Adjust spices etc to your taste/ dish - perfect over veggies, rice, or pasta, next to baked mac n cheese, and even cold on a sandwich.

Whole Wheat, Oatmeal, and Banana Pancakes

The perfect pancake! My son says they taste like cookies, they freeze well, and are super filling while being pretty healthy - and for the people that don't love weat flour or oatmeal, neither one is overpowering. I found that cooking them slowly at a lower temp. than usual worked best and made them rise up super fat - I had the electric griddle set at about 275. Yummy! Thanks!

Mascarpone Stuffed French Toast with Peaches

Oh so very very good and supper easy – start to finish probably half an hour. My peaches were not all that ripe and way pre-season (I did this Valentine's day in Ohio), so I added about a 1/4 cup of orange juice to the pan to help them cook - they turned out spectacular, not too sweet and a great fresh peach taste (I can't imagine doing this with canned peaches). I also added a little extra powdered sugar to the Mascarpone - I would recommend doing a little sampling and sweetening to taste =) I used a fat baguette of fresh sourdough bread because that is what I had; and I bet pretty much any kind of bread would work – as long as it is in “slice yourself” form. I also skipped the plastic bag and just used a fork to stuff my slices, and it worked just fine. I cooked them on an electric griddle with the recommended butter/oil mix. The pictures uploaded here don’t do the recipe justice… mine came out looking absolutely elegant and I will definitely do it again for guests.
