Gumbo Style Chicken Creole

Very tasty! I did have to make some adjustments to the recipe, though. I used a 1/4 of butter instead of oil, only because I've never heard of making a rue with oil. I didn't add the mushrooms because they just don't belong in gumbo! I also had to add a lot more hot sauce than the recipe calls for and 1 1/2 cups of chicken stock. I'm not sure why that isn't listed in the ingredients, but without the extra liquid this would have been inedible goo.

Butterscotch Pecan Cookies

Both my family and I have serious sweet tooths, but even we thought these were much too sweet! If you make these cookies either eliminate the butterscotch pudding mix or the butterscotch chips. The two together are just too much.

Cheesy Italian Tortellini

I love this recipe! The only thing I changed was I omitted the Italian sausage because we just don't really like it. It seems to have plenty of meat in the sauce with just the 1/2 pound of ground beef. Very easy and SO delicious!

Slow Cooker Chicken Stroganoff

I followed this recipe almost exactly and what I ended up with was almost inedible. Despite adding a lot more liquid as it cooked, the chicken still turned out very chewy, almost the consistency of beef jerky. The cream cheese made the sauce overly thick and when combined with the chicken jerky it made a truly awful dish.

Oven Fried Chicken III

I took the suggestion many others have made and tried this with panko bread crumbs. What a difference! With regular bread crumbs this was just OK, but with panko the chicken was delicious! I also coat the chicken in a mixture of 1/2 milk, 1/2 mayo and a couple of TBS of ranch salad dressing instead of just plain mayo.

Black Bean Lasagna

I am totally at a loss as to why this recipe has received so many positive reviews, I did not care for it! I followed the recipe exactly and what I ended up with had a very mushy, yucky consistency and the combination of avocados and black beans made the whole thing look (and taste) very unappealing. Obviously, there are people out there who liked it, so if you simply cannot resist the urge to make this I would definitely recommend you at least use flour tortillas instead of corn.

Garden Pasta Salad

Yummy and simple recipe, but 2 bottles of salad dressing is WAY too much! I made this using the same amount of pasta and vegetables called for but with only about a cup of dressing and that was plenty. 32 ounces of italian dressing???? That's crazy! The salad would have looked more like soup and I can't even imagine what it would have tasted like!

Lemon Chicken Piccata

Very good and relatively simple to make, although I think two tablespoons of capers is a bit much. I like the flavor of capers, but I thought they overpowered all the other flavors in the sauce, including the lemon. Next time I'll just use 1 tablespoon.

Homemade Black Bean Veggie Burgers

These were awesome! I don't know what everyone is talking about, you DO NOT need to add an extra egg! The burgers would been disgusting goo with 2 eggs! I followed the recipe exactly except I forgot to pick up a bell pepper at the store. I used a couple of tablespoons of chopped jalapenos (from a jar, NOT fresh) instead and it gave the burgers a little heat that my husband loved. I will say I did use paper towels to try to remove as much excess water as possible from the beans and jalapenos before I added them to the mix. I also just threw all the ingredients into the food processor and mixed it together all at once. After I cooked the burgers in the oven they looked and tasted like regular hamburgers. Very similar in consistency to ground beef. My husband is a big time carnivore and he literally could not believe the burgers didn't have any meat in them! We both thought they were awesome!

Tater Taco Casserole

This isn't exactly gourmet, but my family and I thought it was delicious. It was also very quick and easy to make. I found that if you want the tater tots to get crispy and brown you should follow the baking directions on the package of tater tots rather than the directions given in the recipe.

Spicy Grilled Cheese Sandwich

This recipe is so simple I don't know why I didn't think of it myself, but it tastes soooo good! I cut down on some of the fat by using cooking spray instead of butter and it still tasted great. I actually like my grilled cheese sandwiches better that way because they are less greasy.

Delicious Black Bean Burritos

These were healthy and delicious. I added about 1/2 tsp of cumin because it needed a little "something". The mixture is thick after you add the cream cheese with the beans, but you can easily fix this by adding about a 1/2 cup or so of your favorite salsa. I also added a tablespoon, instead of a teaspoon, of chopped jalapenos and the burritos still were not that spicy so next time I'll add a lot more. Like others have said, this recipe makes more like 4 burritos than 2, but I would still double the recipe next time so I'll have leftovers.

Southwest Chicken

I cut the chicken into bite sized chunks before I cooked it. I also added onion and garlic but I left out the corn (because I forgot it). I took the chicken mixture and made chicken quesadillas with it and the whole thing turned out delicious!

Fettuccine with Sweet Pepper-Cayenne Sauce

Yummy! I used one red pepper and about a cup full of julienned carrots and it was really good, but next time I make this I think I'll add even more vegetables (julienned zucchini maybe?). I also added a little dried basil which worked well. The amount of cayenne pepper was just enough to give it a little kick, but if you like things really spicy you will need to add more. I added the 3/4 cup of chicken broth but my sauce was not runny at all. I actually had to add a little more liquid at the end because the 12oz of pasta absorbed the sauce very quickly.

Chicken Pot Pie III

Good basic recipe, but unless you REALLY like thyme, 1/2 teaspoon should be plenty. If you don't like thyme, just substitute something else. Almost any seasoning will work. Instead of boiling the chicken, I drizzle a little olive oil over it and sprinkle it with salt, pepper and garlic and then bake it. I think it gives the whole thing a lot more flavor.

Greek Penne and Chicken

This turned out really good but you do have to make a lot of adjustments to the original recipe. Like many others have suggested, I doubled the amount of garlic and oregano, used only a little over half a pound of penne and added a 1/4 cup of cream. Without the changes, this would been just plain chicken and pasta with no sauce (or flavor) at all. To me adding the cream just helped coat the penne with the seasoning better. Next time I will use halved cherry tomatoes instead of the chopped tomato. Both the flavor and the appearance of the tomato were lost when I used the chopped.

Quick Sesame Green Beans

Great recipe! My family loved this. Like others, I wondered about the amount of garlic in the sauce. It would probably be better if you sauteed the garlic before adding it to the green beans, but I was running short on time so I just sprinkled a little garlic powder in the sauce. In fact, I didn't use any miso and I didn't even bother toasting the sesame seeds before I sprinkled them on top and it still turned out great! If you like your green beans a little crunchy you cannot go wrong with this recipe.

Carrot Rice

Simple but very delicious! My son is allergic to peanuts so I substituted sliced almonds and it turned out great. If you really like the taste of ginger, you could add a little more than the recipe calls for.
