Salsa Chicken

I made recipe as written... Good.... But then I made recipe as top reviewer, 79SHALE97, writes... except I do not use rotel, I just use salsa. Coat dish with semi drained diced tomatoes, with the same time and temp, and let it sit with foil.... and WOW. Maybe we just have similar ovens, but it comes out PERFECT. The chicken is crazy juicy yummy. Thanks! I've made it a dozen or so times now- and my husband and I both crave it so bad sometimes, we don't wantr anything else.

No Bake Peanut Butter Pie

As all the other reviews state- INCREDIBLE. The top reviewer is right- You should definitely make the nutter butter crust! I put a dash of cinnamon into the crust mix (cause we love cinnamon in my house). I also add an 1/8 of a tsp of vanilla extract. I only add half of the tub of cool whip into the mix, and reserve the rest for "plastic bag piping" over the top. I keep everything else the same. Pie is to die for. Also- Used this same recipe with changes for my daughter with a peanut allergy: Used crushed oreos (halved and zapped in food processor) for crust. Omitted the peanut butter, and instead mixed about 4 heaping tbs. unsweetened cocoa powder with 2 tbs. brown sugar, and added to mix with a dash of cinnamon.

Glazed Cornish Game Hens With Apricot Pistachio Dressing

These were spectacular! Reading the reviews, I did make changes- I only baked 2 hens, I did not halve the glaze- the original recipe yielded just enough for the 2. Baked them at 375, 400 for last 10 minutes, with a foil tent. Did not broil them, as they were already a perfect golden brown. Left the pistachio part out. I also threw some chunked yellow potatoes with evoo and salt into the pan, surrounding birds, and they came out perfect! They soaked up some of the yummy glaze flavor. My husband tore it all up!

Brown Sugar Meatloaf

Delicious!!! I'm not the biggest meatloaf fan, but my husband and I absolutely loved this :-). He ate leftovers for breakfast this morning, and took the rest with him to work for lunch. I took the advice of other reviewers and made a few modifications- I had 1.15 lbs of meat- I added 1.25 cloves of garlic to meat mix. I used bread crumbs instead of crackers. Only half a cup of milk, and one egg. I added 4 shakes of worchestershire to the glaze mix, and only used 1/4 cup of br sugar. I didn't put glaze on the bottom, but baked for 30 minutes, added glaze on top, and baked for an additional 30 minutes. Served with garlic mashed potatoes and gravy. Soooo yummy. Thanks for the easy recipe!
