very good recipe but I followed everyones suggestions on sweating and I kept the skin on. then after coating with egg and bread crumb mixture, I put them directly into a pan without sauce or cheese and broiled them for about 7 min per side( and sprayed with cooking spray a few times to get them more golden brown and crispy) then I put sauce in pan and layered the eggplant and added cheese. It came out amazing!!!! my fiancee was obsessed!! We are currently eating leftovers for breakfast!!!!!!!! Oh and as for the pasta sauce I did half Prego(with mushrooms) and homemade sauce (sauteed garlic and italian seasoning, red pepper flakes, onion salt, cooking spray and a can of diced tomatoes!! YUM!
