Spinach Stuffed Chicken Breasts
very good recipe but made quite a few changes per other reviews suggestions and based on other high rated recipes. First, I marinated the chicken breasts in buttermilk for 3 hours outside of the fridge. I sauteed 1 bag of fresh spinach in butter and added salt and pepper. Then i mixed 2 parts mayo with 1 part sour cream, added sun dried tomatoes and cooked turkey bacon pieces. mixed together with feta and jack cheese and added garlic salt. I used thin chicken breasts and rather than butterflying the breasts, I just wrapped them around the stuffing and then put a peice of bacon and pinned them together. cooked in the oven for 45 minutes. came out fabulous!

Eggs Benedict
the hubby liked it but the poached eggs came out funky so i ended up frying the eggs which he loved. Used a lot less lemon, added more worcestershire and tabasco and extra black pepper which was fantastic. 2 pieces of canadian bacon per egg benny, stuck it in the oven with the sauce scooped on top and then stuck the remaining sauce in the oven on broil and then spooned the excess on . Husband loved it! oh and mixed hollandaise with handheld mixer

Creamy Au Gratin Potatoes
My husband absolutely loved this! Followed the recipe exactly except I did put the cheese sauce in between the layers and I put bread crumbs on top to make it crispy and baked for the last 20 minutes uncovered. Added a lot of salt and pepper and red pepper flakes. Came out perfectly!
