Chicken Enchiladas I

I even eliminated the water and its still a soupy mess. Why this recipe has 5 stars is beyond me; but I think alot has to do with people making modifications too it to improve it.

Absolutely Fabulous Greek/House Dressing

After losing my normal recipe, I turned to this one. It wasn't good initially. I had to add more olive oil to offset the vinegar. Given all the good reviews this recipe has, I guess the olive oil to vinegar ratio isn't off (just my taste is) but normally in these type of dressings, your vinegar should not exceed your oils.

Easy OREO Truffles

Here is a couple of tricks. Use a food processor. The finer the cookie crumble the better it stays together. Make sure your cream cheese is soft and use your hands to work the cream cheese into the cookie crumbs. It should end up like dough. Do not refrigerate the cookie mixture before you roll it into balls, but after. Use a double boiler. The chocolate will be too thick and you won't get a nice smooth covering if you microwave it. Put the ball on the fork and lower it into the chocolate then when you bring it out, tap the fork against the side of the pan which will make a more even coating and get rid of excess chocolate. Rather than sprinkle with cook crumbs, drizzle with white chocolate. Makes a much prettier truffle.

Roasted Garlic Mashed Potatoes

This was really good. I did not follow the recipe exactly because I only made a small portion but its hard to screw this up. I would say that the cooking time for the garlic is WAY too long. I only cooked the garlic for about 15 minutes. Peeled garlic cooks fast.

Spiced Butternut Squash Soup

Very good recipe. I think next time I might leave out the sherry. I tasted it before I added it and thought the flavor was better.I also did not use as much chicken broth (homemade) to avoid the runny-ness others have talked about. I used one apple and one potato. I might use two apples next time. I think this recipe could be modified to include other spices; it seems like it would be very versatile. I did add more cayenne pepper for some extra spiciness. Thanks for a great recipe.

Chicken Breasts with Balsamic Vinegar and Garlic

I really wanted to like this recipe. I absolutely love Balsamic Vinegard and I'm a chicken fanatic. Unfortunately the simplicity of the recipe was also its downfall. There was no depth of flavor at all. It is chicken breast cooked in Balsamic...I couldn't even get the garlic flavor. I'll probably try and make it again and use some suggestions in the reviews section to see if I can pull out more flavor, but this recipe as written was too bland for me. Sorry

Chicken Breasts in Caper Cream Sauce

I'm giving this recipe four stars only because I did not care for the dill with chicken. I think it would be a great recipe with fish so I'll try that next time. If I use chicken again, I might substitute a different herb for the dill. Otherwise....good dish.

Alfredo Sauce

Yum! Simple Alfredo sauce that can be modified to make other dishes. Two things...the recipe does not call for salt or pepper which I believe was an oversight, but be careful....parmesan is salty in its own right so its easy to over salt. Its also important to GRATE your parmesan or it won't melt properly. I used shredded...pretty lumpy...my fault.

Pork Brine

This is Food Network's Alton Browns recipe. Amazingly it does brine the pork in two hours. I would recommend cutting the salt in half and make sure to use kosher salt, not regular table salt. It does make the pork chop more juicy.

Crab and Lobster Stuffed Mushrooms

Fabulous....I didn't have crab so made it with all pre-cooked lobster and I used italian bread crumbs instead of croutons. Actually, I'm not sure why you would even bother with the croutons unless you didn't have bread crumbs. At the recommendation of others, I pre-cooked the mushrooms which expelled some of the liquid in them and I sprayed the pan with olive oil rather than coating it with butter. They were fantasitic. Thank you

Apple Pie

I made this pie as shown and it was very good EXCEPT for the ginger. It adds an odd flavor that might turn people off to it. Because I knew what it was I was okay with it, but it just doesn't work with apple pie and next time I will eliminate it and perhaps add cloves.

Kung Pao Chicken

I was very disappointed in this recipe. It tasted nothing like kung pao chicken...not really a deal breaker if the taste is good, but in this case, the flavor was just off. I think it might have been the huge amount of chili paste...a single flavor source really doesn't equate to much depth of flavor. The sauce was also way to thick, it reminded me of a spicy ketchup. I might try making this again with less corn starch, a single teaspoon of chili paste and red chili peppers, but as it stands, I did not enjoy this at all. Sorry.

Linguine with Fresh Tomatoes

Yummy! Okay I did change a couple of things...i used olive oil instead of butter, garlic salt instead of salt and I added a sweet pepper. I'm not a fan of raw garlic so I sauteed the garlic and pepper and added all the other ingredients to the saute pan with the pasta to heat it everything through. That said, in it's simplicity this recipe is awesome!

Grilled Fish Sandwiches

This is a quick simple meal and the spread was yummy. A couple of changes - I used Tipilia, marinated the fish for 15 minutes in lime juice and pepper and added a splash of lemon juice to the spread.

Sesame Shrimp

Okay not sure what I'm missing here...but sorry, this recipe was very very bland. It either needs to be sweetened or spiced up...maybe both. Either way, I can't recommend this recipe unless someone is using it as a base with significant modifications.

Kai Kang Dang (Chicken Curry with Coconut Milk)

I gave this recipe 3 stars because of the modifications necessary to make it perfect. 1. less coconut milk - one can is more than enough 2. half the fish sauce 3. double or triple the curry Other changes - couldn't find bamboo shoots so I used bean sprouts. Use your favorite fresh and/or frozen veggies....as they make the meal. I couldn't find fresh Thai Basil so I used dried Thai Basil. Do not substitute for any other kind of Basil. This is where most of your flavor comes from. The dried worked but I'm sure fresh would have been that much better. This is a good base reciipe but it's not very tasty without the 3 changes above.
