Chunky Cheesecake Brownies

SO yummy and rich. I baked this in a 9" round springform pan, it turned out great! A little on the sweet side though, I forgot to cut the sugar a bit. The batter consistency freaked me out a bit (thick and somewhat slimy) but it cooked up just fine.

Caramel Apple Dip

For a real caramel flavor, I doubled the amount of caramels. Otherwise it was overpowered by the cream cheese. Super yummy though - hard to stop eating!

Grilled Chicken Thighs Tandoori

Very yummy! I used legs and thighs and baked them in the oven (about 40 minutes) with a little finishing time under the broiler. Thanks to the poster that suggested putting lemon in the marinade since my husband bought vanilla yogurt "isn't it the same as plain?" *sigh* The juices made a great sauce for basmati rice on the side. Loved this recipe-the whole house smelled divine!! Will make again and again!

Wonderful Chicken Curry Salad

Made this recipe for a 40th bday party. It was gobbled up quick - the hit of the party (it even stole the spotlight from the bacon-wrapped dates!) I used canned chicken and served it in little pastry shells. I think I used 3 boxes of shells - will get more next time since I had alot more salad than shells.

Slow Cooker Italian Beef for Sandwiches

Made this for the Super Bowl - it was awesome! I mixed all the spices and rubbed them onto the roast, letting it sit in the fridge overnight. The next morning I browned it in a skilled and put it in the crockpot with beef broth (I used 2 cups since I only had a 3 1/2lb. roast.) Once cooked, I shredded the meaat and put it back in the juices and used some of the juice to saute sliced onions and peppers for the sandwiches. Will definitely use this one again - thanks so much Maureen!

California Bean Dip

The recipe is fantastic for football parties and tailgating! My husband has been bugging me for weeks - reminding me to make this recipe for our first party of the season. I find it works very well with low-fat dressings, but we love to eat it with Fritos Scoops - so much for low fat! A winner - thanks Jolene!!
