Yummy! We just finished dinner and my husband and I love mild mexican food, and this was a hit with BOTH of us! I shredded 3 cooked chicken breasts and put them in the crockpot, then made the following changes: I added 6 oz tomato sauce, 1/2 c. salsa, 1/2 pkg of taco seasoning, 1 tsp minced garlic and added, as the recipe calls for, 1 tsp each of chili powder and cumin. I let it cook for 8 hours--my husband stirred it a few times throughout the day. Since we aren't big eaters, but love great food, I filled 4 small taco-size flour tortillas and added cheddar cheese inside and also topped them with cheddar cheese, too. I put them in a microwavable dish and cooked them long enough to melt the cheese. Delicious!
