Hot Pepper Jelly

I loved this recipe, but I made a few modifications: I used three large bell peppers (red, yellow, and orange) and juiced two jalapenos and one habanero for the spice. I will play with the type and amount of peppers in the future to get different flavors and colors. The recipe didn't have the right amount of pectin, so I doubled it like a few others commentators suggested and it was perfect.

Quick and Easy Pesto Polenta Lasagna

I think what made this dish for me was preparing my own polenta from scratch. It is a biut challenging to make your own, but well worth the taste of home made and not packaged, which tends to be bland and have a weird chewy texture. Plus, it is fun to watch your polenta firm up and have it be your own. Otherwise, great idea. I am going to try making my own pesto as well, since the jarred pesto does not have the flavor I am looking for.
